Description

This rustic black cabbage and beans soup is a real comfort food, perfect for autumn and winter evenings. The preparation is simple and quick thanks to the Thermomix®, which helps us to chop the vegetables and cook everything evenly. The black cabbage, with its intense flavour, blends perfectly with the sweetness of the carrots and the creaminess of the borlotti beans. A single dish, nutritious and full of flavour, ideal for the whole family. I often prepare it and serve it with a drizzle of extra virgin olive oil and a sprinkling of chilli pepper for an extra touch. Try it, you won't regret it!

Ingredients (12 ingredients)

  • 300 g black cabbage
  • 1 piece onions
  • 1 piece carrots
  • 1 coste celery
  • 1 clove garlic
  • 3 foglie sage
  • 400 g boiled borlotti beans
  • 1.5 l vegetable broth
  • 150 g instant polenta
  • olive oil
  • fine salt
  • dried chilli pepper

Preparation (9 steps)

Prepare black cabbage

The black cabbage is cleaned by removing the stem from the leaves and roughly cut with a knife.

Chop vegetables

An onion, a carrot and a rib of celery cut into pieces are placed in the Thermomix bowl and chopped for 5 Sek./Stufe 5.

Sauté

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a clove of garlic and a drizzle of olive oil to the bowl. Sauté for 3 Min./120°C/Stufe 1.

Add black cabbage and beans

Add 3 sage leaves, 300g black cabbage and 400g boiled borlotti beans to the bowl.

Crush beans

Crush part of the beans with a fork directly in the bowl.

Season

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add fine salt and dried chilli pepper to taste and mix for 5 Min./100°C/Linkslauf Stufe 1.

Pour vegetable broth

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Pour 1.5 l of boiling vegetable broth into the bowl and cook for 10 Min./100°C/Linkslauf Stufe 1.

Add polenta

Thermomix® Setting
3 min/212°F/Linkslauf Speed 2 100 Reverse

While stirring constantly, add 150g instant polenta in a rain to the bowl and cook for 3 Min./100°C/Linkslauf Stufe 2.

Let it rest for a few minutes in the bowl before serving.
