Description

This festive marzipan cake is a delightful centerpiece for any celebration! A rich fruitcake is transformed with layers of apricot jam, golden marzipan, and a smooth white icing. Decorated with sparkling gold balls and a wide ribbon, it's as beautiful as it is delicious. This cake is perfect for Christmas, New Year's Eve, or any special occasion. Ingredients (7 ingredients)

  • 20 cm fruitcake
  • 5 tbsp apricot jam
  • 750 g golden marzipan
  • 750 g white ready-to-roll icing
  • 3 piece 5-pointed star cutters
  • 30 g pack small gold balls
  • 65 cm length of wide ribbon

Prepare the Cake

Thermomix® Setting
1 min/122°F/Speed 2 50

Place the fruitcake onto a cake board or plate. In the Thermomix, add the apricot jam and heat for 1 Min./50°C/Stufe 2 to make it easier to spread. Spread the warmed apricot jam evenly over the top and sides of the fruitcake.

Cover with Marzipan

Roll out the golden marzipan on a lightly sugared surface. Carefully drape the marzipan over the cake, smoothing it down to cover the entire surface. Trim any excess marzipan at the base.

Apply the Icing

Lightly brush the sides of the marzipan-covered cake with water. Roll out the white ready-to-roll icing on a lightly sugared surface. Drape the icing over the cake, smoothing it down. Trim any excess icing at the base.

Create Star Cutouts

Gently press the star cutters into the icing, stopping when you reach the marzipan layer. Carefully remove the star shapes using the cutter or the tip of a knife.

Add Small Stars

Re-roll the trimmings of icing and stamp out a couple of small stars. Place these small stars inside the larger star-shaped spaces on the cake.

Decorate with Gold Balls

Sprinkle the small gold balls into the star-shaped gaps on the cake to add a touch of sparkle and festivity.

Finish with Ribbon

Tie the wide ribbon around the base of the cake to complete the decoration. The cake can be decorated up to a week in advance.
