Description

These festive butter cookies are a delightful treat to bake and share during the holiday season. The dough comes together quickly in the Thermomix®, making the process a breeze. I've been making these for years, and they're always a hit! The vanilla extract adds a lovely warmth, and the edible decorations make them extra special. They're perfect for gifting or enjoying with a cup of tea on a cold winter's evening. The chilling time is essential for easy rolling. Ingredients (9 ingredients)

  • 140 g icing sugar
  • 1 tsp vanilla extract
  • 1 piece egg yolk
  • 250 g butter
  • 375 g plain flour
  • 200 g icing sugar
  • edible food colouring
  • edible gold and silver balls
  • 2 m thin ribbon

Combine and chill the dough

Thermomix® Setting
20 sec/Speed 4

Add 140g icing sugar, 1 tsp vanilla extract, 1 egg yolk, and 250g butter into the Thermomix bowl. Mix for 20 Sec./Stufe 4 until well combined. Add 375g plain flour and mix for 30 Sec./Stufe 4 until a firm dough forms. Shape the dough into two flat discs, wrap them in cling film, and chill in the refrigerator for 30 minutes.

Mix in flour and form dough

Thermomix® Setting

Add 375g plain flour to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until a firm dough forms. Shape the dough into two flat discs, wrap them in cling film, and chill in the refrigerator for 30 minutes.

Roll out and cut the cookies

Preheat the oven to 190°C (fan 170°C/gas mark 5). Line two baking sheets with non-stick baking paper. Roll out the chilled dough on a lightly floured surface to about 5mm thickness. Cut out Christmas shapes using cookie cutters and place them on the prepared baking sheets. Using a skewer, make a small hole at the top of each cookie.

Bake the cookies

Bake the cookies in the preheated oven for 10-12 minutes, or until lightly golden. Transfer the baked cookies to a wire rack to cool completely.

Prepare the icing

10 sec/Speed 3

Add 200g icing sugar and a few drops of cold water to the Thermomix bowl. Mix for 10 Sec./Stufe 3 until a thick, but still runny icing forms. Add edible food coloring, if desired, and mix for 5 Sec./Stufe 3 to incorporate the color.

Color the icing

Add edible food coloring to the Thermomix bowl. Mix for 5 Sec./Stufe 3 to incorporate the color.

Decorate the cookies

Spread the icing over the cooled cookies. Decorate with edible gold and silver balls. Thread with ribbon when the icing is dry.
