Description

This simple gnocchi dish with spinach and tomatoes is a quick and inexpensive vegetarian main course, ideal for student cuisine. The preparation is mainly done in the Thermomix® and is ready in just 30 minutes. Fresh ingredients such as spinach and cherry tomatoes ensure a delicious taste. The dish is easy to prepare and perfect for a stressful everyday life.

Ingredients (11 ingredients)

  • 3 EL Pine nuts
  • 1 Onion
  • 150 g Baby spinach
  • 200 g Cherry tomatoes
  • 150 ml Water
  • 150 g Cream cheese with herbs
  • 2 EL Olive oil
  • 600 g Gnocchi
  • Salt
  • Pepper
  • Nutmeg

Preparation (9 steps)

Toast pine nuts

Toast 3 tbsp of pine nuts in a pan without fat until golden brown and set aside. Do NOT perform this step in the Thermomix.

Chop onion

Put 1 peeled onion in the mixing bowl and chop for 3 sec/speed 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min/120°C/speed 1.

Fry gnocchi

Fry 600 g of gnocchi (from the refrigerated section) in a pan with the sautéed onions for about 5 minutes. Do NOT perform this step in the Thermomix.

Add spinach

Wash 150 g of baby spinach, chop coarsely and add to the pan with the gnocchi and let it wilt. Do NOT perform this step in the Thermomix.

Prepare sauce

Add 200 g halved cherry tomatoes, 150 ml water and 150 g cream cheese with herbs to the pan. Mix everything well.

Simmer

Simmer the sauce for 5 minutes over medium heat. Do NOT perform this step in the Thermomix.

Season

Season everything with salt, pepper and nutmeg. Do NOT perform this step in the Thermomix.

Serve

Arrange the gnocchi with the sauce on plates and sprinkle with the toasted pine nuts. Serve immediately. Do NOT perform this step in the Thermomix.
