Description

This recipe for Pasteis de Nata, the famous Portuguese custard tarts, is prepared with the Thermomix®. The creamy filling of milk, egg yolk and lemon is cooked in the Thermomix® and then baked in puff pastry molds. Ideal as a sweet dessert or for brunch. Preparation takes about 2 hours and yields 12 servings.

  • 225 g Sugar
  • 150 ml Water
  • 0.5 piece Lemon (peel)
  • 500 ml Milk
  • 50 g Flour
  • 1 pinch Salt
  • 8 piece Egg yolk
  • 1 tsp Vanilla extract
  • 0.5 piece Lemon (peel, zest)
  • 1 pack Puff pastry (ready-made or homemade)
  • Cinnamon (for sprinkling)
  • Powdered sugar (for sprinkling)

Prepare puff pastry (optional)

If ready-made puff pastry is not used, prepare it according to a suitable recipe and chill. This is not a Thermomix step.

Mix sugar and water

Add 225 g sugar and 150 ml water to the mixing bowl and cook for 8 min./120°C/speed 1 without the measuring cup.

Thicken sugar syrup

Cook the sugar syrup for another 2 min./Varoma/speed 1 without the measuring cup until it thickens slightly.

Add lemon peel

Add the peel of half a lemon (in strips) and leave to infuse for 1 min./90°C/speed 1 without the measuring cup.

Let syrup cool

Pour the syrup into a bowl and let it cool. Remove the lemon peel. This is not a Thermomix step.

Bring milk to a boil

Add 500 ml milk, 50 g flour and 1 pinch of salt to the mixing bowl and cook for 7 min./90°C/speed 4 without the measuring cup.

Whisk egg yolks

Lightly whisk 8 egg yolks in a separate bowl. This is not a Thermomix step.

Mix egg yolks and syrup

Slowly add the cooled syrup mixture to the milk-flour mixture in the mixing bowl while stirring constantly (speed 2) and mix for 20 sec./speed 2.

Refine cream

Add 1 tsp vanilla extract and the grated zest of half a lemon and stir in for 10 sec./speed 2.

Let cream cool

Pour the cream into a bowl, cover with cling film directly on the surface and let it cool. This is not a Thermomix step.

Shape and fill Pasteis de Nata

Roll out the puff pastry and cut into approx. 12 equal pieces. Shape each piece into a ball and press into the molds so that an edge is formed. Fill the cooled cream into the molds. This is not a Thermomix step.

Bake Pasteis de Nata

Bake the Pasteis de Nata in a preheated oven at 250°C top/bottom heat (or grill function) for approx. 15-20 minutes until golden brown. This is not a Thermomix step.

Serve

Remove the Pasteis de Nata from the oven, let cool briefly and sprinkle with cinnamon and powdered sugar. Serve warm. This is not a Thermomix step.
