Description

This chocolate cake without flour is a real treat for all chocolate lovers who want to watch their carbohydrate intake. It is juicy, chocolatey and incredibly delicious! I often bake it for birthdays or just when I feel like something sweet. The ground almonds give it a great texture and the vanilla flavor rounds off the taste perfectly. If you like, you can serve it with fresh berries. An absolute favorite recipe that is always well received by my guests!

Ingredients (11 ingredients)

  • 2 piece large Eggs
  • 1 Prise(n) Salt
  • 30 g Dark chocolate (85% cocoa content)
  • 55 g Butter
  • 40 g Baking cocoa
  • 1 Tropfen Vanilla flavor
  • 150 g Sugar substitute (e.g. Xylitol)
  • 70 g ground Almonds
  • 1 tsp Powdered sugar
  • Milk
  • Fat

Preparation (9 steps)

Preheat oven and separate eggs

Preheat the oven to 160 °C circulating air. Separate the eggs and set aside the egg whites.

Whisk egg whites until stiff

Place the egg whites with a pinch of salt in the mixing bowl and whisk with the butterfly 3 min./level 3.5 until stiff. Transfer and set aside.

Melt chocolate and butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Roughly chop the dark chocolate and place in the mixing bowl together with the butter. Melt for 3 min./50°C/level 2.

Add cocoa and vanilla

Thermomix® Setting
10 sec/Speed 3

Add baking cocoa and vanilla flavor to the melted chocolate in the mixing bowl and stir for 10 sec./level 3.

Stir egg yolks and sugar substitute until frothy

Thermomix® Setting
2 min/Speed 4

Add the egg yolks and sugar substitute to the mixing bowl and stir for 2 min./level 4 until frothy.

Stir in chocolate mixture and almonds

Thermomix® Setting
20 sec/Speed 3

Add the chocolate mixture and the ground almonds and stir for 20 sec./level 3. If necessary, add some milk if the mixture is too firm.

Fold in beaten egg whites

Carefully fold the beaten egg whites into the dough with a spatula.

Baking

Pour the dough into a greased springform pan (18 cm diameter) and bake in the preheated oven for about 30-35 minutes.

Serve

After baking, let the cake cool down a little, sprinkle thinly with powdered sugar and serve.
