Description

This ground beef and bell pepper skillet with cauliflower rice is a quick and easy low-carb dish that's ideal for a hearty lunch or dinner. The Thermomix® makes preparing the cauliflower rice a breeze. The dish is rich in vegetables and protein and is suitable for the whole family.

Ingredients (13 ingredients)

  • 3 Stück Bell peppers
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 500 g Cauliflower
  • 2 TL Olive oil
  • 400 g Ground beef
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Paprika seasoning
  • 1 EL Tomato paste
  • 400 g Diced tomatoes
  • 150 ml Beef broth
  • 100 g Shredded Cheddar

Preparation (9 steps)

Prepare the bell peppers

Wash, core, and cut the bell peppers into bite-sized pieces. Set aside.

Chop the onion and garlic

Peel the onion and quarter it. Peel the garlic clove. Place the onion and garlic in the mixing bowl and chop for 3 sec/speed 5. Scrape down the sides with the spatula.

Chop the cauliflower

Thermomix® Setting

Divide the cauliflower into florets. Place the florets in the mixing bowl and chop for 5 sec/speed 5 until it has the consistency of rice. Transfer and set aside.

Sauté the cauliflower rice

Heat half of the olive oil (1 tsp) in a pan and sauté the cauliflower rice over medium heat for about 5 minutes. Season with salt and pepper. Then remove from the pan and set aside.

Sauté the ground beef

Heat the remaining olive oil (1 tsp) in the same pan. Add the ground beef, onion, and garlic and sauté for about 5 minutes until the ground beef is crumbly. Season with salt and pepper.

Sauté the bell peppers

Add the prepared bell pepper pieces to the ground beef and sauté for another 2 minutes.

Prepare the sauce

Add paprika seasoning, tomato paste, diced tomatoes, and beef broth to the ground beef. Mix everything well and simmer over medium heat for about 5 minutes.

Fold in the cauliflower rice

Fold the sautéed cauliflower rice into the ground beef and vegetable mixture and mix well.

Melt the cheese

Sprinkle the shredded Cheddar over the skillet. Close the lid and let the cheese melt over low heat for about 10 minutes.
