Description

This beef stew with red wine is a comforting and tasty dish, perfect for autumn and winter evenings. The meat, marinated overnight in a full-bodied red wine with vegetables and spices, becomes incredibly tender and fragrant. I have been preparing this dish for years and it is always a hit at home. The sauce, rich and creamy, is a real delight. Feel free to serve it with steamed potatoes or a vegetable puree for a complete and delicious meal. This dish is ideal for special occasions or just to treat yourself with family. A real treat!

Ingredients (12 ingredients)

  • 1 clove of garlic
  • Thyme
  • Bay leaf
  • Clove
  • Olive oil
  • Fine salt
  • Pepper
  • 1 piece onion
  • 1 blanc of leek
  • 1 bouteille of red wine
  • 1 carotte carrot
  • 1 kg of beef

Preparation (7 steps)

Preparation of the marinade

In a large bowl, mix 1 bottle of red wine, 1 carrot cut into rounds, 1 minced leek white, 1 chopped onion, 1 crushed garlic clove, thyme, bay leaf and cloves. Add 1 kg of beef cut into pieces. Marinate in the refrigerator overnight.

Drain and brown the meat

The next day, drain the beef pieces and reserve the marinade. In a cast iron casserole dish, heat olive oil and brown the meat on all sides until golden brown. Remove the meat and set aside.

Preparation of the vegetables in the Thermomix

Put the reserved onion from the marinade in the Thermomix bowl and chop 3 Sec./Stufe 5. Add the leek white and the reserved carrot from the marinade and chop 3 Sec./Stufe 4.

Sauté the vegetables

Add olive oil to the Thermomix bowl and sauté the chopped vegetables 3 Min./120°C/Stufe 1.

Cooking the stew

Put the pieces of beef back into the Thermomix bowl. Add the reserved marinade, salt and pepper. Add water if the meat is not completely covered by the marinade. Cook 180 Min./100°C/Stufe 1.

Blend the sauce

Thermomix® Setting
30 sec/Speed 8

Remove the pieces of beef from the Thermomix bowl and set aside. Blend the sauce with the vegetables 30 Sek./Stufe 8, gradually increasing the speed. The sauce will thicken.

Finalize cooking

30 min/212°F/Speed 1 100

Put the pieces of beef back into the Thermomix bowl and continue cooking 30 Min./100°C/Stufe 1, until the meat is cooked through.
