Description
This rhubarb cake with foam, prepared in the Thermomix®, is a simple and delicious cake classic for spring. The main ingredients are rhubarb, eggs, sugar, oil and milk. In just 45 minutes, including 20 minutes of active working time, a delicious dessert for the whole family is created. The recipe is ideal for anyone looking for an uncomplicated cake. The cake is perfect as a sweet treat with coffee or as the conclusion to a light lunch.

1 Stück Rhubarb (amount as needed)
Preparation (4 steps)
Prepare dough
Put 4 eggs and 2 tbsp sugar in the mixing bowl. Beat for 3 min./level 3.5/butterfly until frothy. Add 2 tbsp oil, 75 ml milk and 1 packet of vanilla sugar and mix for 15 sec./level 3. Add 1/4 packet of baking powder and 2 tbsp sugar and mix for 10 sec./level 3.
Bake the dough
Pour the dough into a greased springform pan (24x24 cm) and bake in a preheated oven at 180°C for about 12 minutes.
Prepare foam
Insert butterfly. Put 4 egg whites, 3 tbsp sugar and 1 packet of vanilla sugar in the mixing bowl. Beat for 3 min./level 3.5/butterfly until stiff.
Add rhubarb and foam to the cake
Place rhubarb on the pre-baked cake. Spread the meringue on top and bake for another 10 minutes.
