Description

A festive dish for special occasions: Pork loin in a rich port wine sauce. The meat is seared in a pan and then braised in the Thermomix® with vegetables and aromatics. The sauce is pureed and refined with cream. Preparation time approx. 75 minutes, ideal for 6 people.

Ingredients (13 ingredients)

  • 1 kg Pork loin
  • 2 EL Olive oil
  • 2 Stück Onions
  • 2 Stück Carrots
  • 100 g Celery
  • 200 ml Port wine
  • 200 ml Broth
  • 1 EL Balsamic vinegar
  • 2 Stück Bay leaves
  • 6 Stück Juniper berries
  • 200 ml Cream
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (9 steps)

Prepare vegetables

Peel and roughly dice the carrots and celery. Peel and quarter the onions.

Chop vegetables

Put the prepared onions, carrots and celery in the mixing bowl and chop for 5 sec./speed 5. If necessary, scrape down from the edge with the spatula.

Sauté vegetables

Add the olive oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat

Season the pork loin with salt and pepper. Sear the meat in a separate pan with a little oil on all sides.

Prepare sauce

Add the port wine, broth, balsamic vinegar, bay leaves and juniper berries to the vegetables in the mixing bowl. Place the seared pork loin in the mixing bowl.

Braising

Attach the measuring cup and cook everything for 45 min./100°C/speed 1.

Remove meat and puree sauce

30 sec/Speed 8-10

Remove the pork loin from the mixing bowl and keep warm. Remove the bay leaves. Puree the sauce in the mixing bowl for 30 sec./speed 8-10, holding the lid firmly in place.

Refine sauce

5 min/194°F/Speed 2 194°F

Add the cream to the pureed sauce in the mixing bowl and heat for 5 min./90°C/speed 2. Season with salt and pepper.

Serve

Cut the pork loin into slices and serve with the port wine sauce. Dumplings or Spätzle go well with it.
