Description

This speckled kidney bean stew with sausages is a comforting spoon dish, ideal for cold winter days. The combination of the beans with the chorizo, black pudding, and smoked bacon gives it an intense and delicious flavour. I have been preparing it for years and it is always a success at home. It is a perfect dish to share with family or friends, especially at Christmas. Also, it can be prepared in advance and is even richer the next day. Go ahead and try it, you will love it! You can adjust the amount of sausages to your liking and add other vegetables such as leek or cabbage. A complete and nutritious dish that will warm your body and soul!

Ingredients (18 ingredients)

  • 250 gramos Speckled kidney beans
  • 1 piece Onion
  • 3 unidades Carrot
  • 1 piece Red bell pepper
  • 3 dientes Garlic
  • 1 trozo Pumpkin
  • 1 piece Tomato
  • 3 unidades Potato
  • 2 unidades Chorizo
  • 2 unidades Black pudding
  • 2 trozos Smoked bacon
  • 1 piece Chistorra
  • 3 unidades Pork sausage
  • 1 cucharadita Hot paprika
  • 1 cucharadita Sweet paprika
  • 1 hoja Bay leaf
  • 1 pinch Salt
  • 1 chorro Oil

Preparation (9 steps)

Preparation of the beans

Leave the speckled kidney beans soaking overnight in plenty of water.

Chopping vegetables

Thermomix® Setting

Insert 1 onion, 3 cloves of garlic and 1 red pepper into the Thermomix bowl. Program 3 sec./Stufe 5 to finely chop the vegetables.

Initial sauté

Thermomix® Setting
5 min/248°F/Speed 1 120

Add a splash of oil to the Thermomix bowl. Program 5 Min./120°C/Stufe 1 to sauté the chopped vegetables.

Add grated tomato

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 grated tomato to the Thermomix bowl. Program 3 Min./120°C/Stufe 1 to cook the tomato.

Incorporate the meat

Thermomix® Setting
5 min/248°F/Speed 1/Linkslauf 120 Reverse

Add 2 chorizos cut into pieces, 2 black puddings cut into pieces, 2 pieces of smoked bacon cut into pieces, 1 chistorra cut into pieces and 3 pork sausages cut into pieces to the Thermomix bowl. Program 5 Min./120°C/Stufe 1/Linkslauf to sauté the meat.

Add the rest of the vegetables

3 min/248°F/Speed 1/Linkslauf 120 Reverse

Add 3 peeled and chopped carrots, 3 peeled and chopped potatoes and 1 piece of peeled and chopped pumpkin to the Thermomix bowl. Program 3 Min./120°C/Stufe 1/Linkslauf to sauté the vegetables.

Incorporate the beans and seasonings

Add 250 grams of drained speckled kidney beans, 1 teaspoon of hot paprika, 1 teaspoon of sweet paprika, 1 bay leaf and 1 pinch of salt to the Thermomix bowl. Cover with water up to the maximum mark on the bowl.

Cooking the stew

Thermomix® Setting
40 min/212°F/Speed 1/Linkslauf 100 Reverse

Program 40 Min./100°C/Stufe 1/Linkslauf. If necessary, add more water during cooking.

Let the stew rest for a few minutes before serving hot.
