Description

This Key Lime Pie is a refreshing treat for the summer. The combination of crispy cookie base, creamy lime filling, and airy cream topping makes this pie a highlight. With the Thermomix® preparation is quick and easy. Ideal as a dessert for festive occasions or just to enjoy.

Ingredients (9 ingredients)

  • 200 g Butter biscuits
  • 120 g Butter (liquid)
  • 30 g brown sugar
  • 800 g sweetened condensed milk
  • 240 g Plain Yogurt (2% fat)
  • 175 ml Key lime juice
  • 240 ml Lime zest (organic lime)
  • 1 tsp Cream (cold)
  • Icing sugar

Preparation (7 steps)

Chop butter biscuits

Add 200 g butter biscuits to the mixing bowl and chop for 10 sec/speed 10.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add 120 g liquid butter and 30 g brown sugar to the chopped butter biscuits in the mixing bowl and mix for 20 sec/speed 4.

Place dough in mold and bake

Place the dough in a suitable mold and press down. Bake in a preheated oven at 180°C (fan oven) for 15 minutes.

Prepare filling

Add 2 cans sweetened condensed milk (800 g total), 240 g plain yogurt (2% fat), 175 ml Key lime juice and 1 tsp lime zest (organic lime) to the mixing bowl and stir for 30 sec/speed 3.

Pour filling onto base and chill

Pour the filling onto the pre-baked base and refrigerate for at least 45 minutes.

Prepare topping

Thermomix® Setting

Add 240 ml cold cream and 2 tbsp icing sugar to the mixing bowl. Beat until stiff with the butterfly for 2 min/speed 3.5.

Decorate pie

Spread the cream on the chilled pie and decorate with 1 tsp lime zest (organic lime) and thin lime slices.
