Leek tart recipe.

Ingredients (14 ingredients)

  • 100 g Butter, soft, in pieces
  • more for greasing
  • 200 g Flour
  • 100 g Quark
  • 1 TL Baking powder
  • 1.5 TL Salt
  • 200 g Gouda, in pieces
  • 400 g Water
  • 400 g Leek, in rings
  • 200 g Cream
  • 4 Stück Eggs
  • 150 g cooked Ham, in slices, quartered
  • 0.5 TL Pepper
  • 1 Prise Nutmeg

Preparation (11 steps)

Preheat oven and prepare springform pan

Preheat oven to 200°C. Grease springform pan (Ø 26 cm).

Prepare dough

Thermomix® Setting

Put flour, butter, quark, baking powder and 1 tsp salt in the mixing bowl and process for 2 min/kneading stage to a smooth dough.

Roll out dough

Remove the dough and roll out on a floured work surface into a circle (Ø approx. 32 cm).

Place dough in springform pan and pre-bake

Place the dough in the prepared springform pan, pull up an edge (5 cm), prick the bottom several times with a fork so that no bubbles form.

Pre-bake dough

Pre-bake for 10 minutes at 200°C.

Chop Gouda

10 sec/Speed 5

During this time, put Gouda in the mixing bowl, chop for 10 sec/speed 5 and transfer.

Cook leek

Thermomix® Setting
12 min/Varoma/Speed 1 Varoma

Pour water into the mixing bowl, insert the simmering basket, weigh in leek rings and cook for 12 min/Varoma/speed 1.

Distribute leek

Spread the leek on the pre-baked base and empty the mixing bowl.

Reduce oven temperature

Reduce oven temperature to 180°C.

Prepare sauce

15 sec/Speed 4

Put Gouda, ham, cream, eggs, pepper, ½ tsp salt and nutmeg in the mixing bowl, mix for 15 sec/speed 4.

Bake tart

Pour over the leek, bake for 45 minutes (180°C), cut into pieces and serve hot.
