Description

A hearty main course from the Zillertal region.

Ingredients (14 ingredients)

  • 250 g Flour
  • 4 Stück Eggs
  • 500 ml Milk
  • 1 Prise Salt
  • 250 g grated Gray cheese
  • Zieger cheese
  • Doughnut curd
  • fresh chives
  • Salt
  • Pepper
  • 2 Stück large Potatoes
  • Butter
  • Chives
  • 250 g alternative: Mountain cheese, Harzer, Gorganzola

Preparation (6 steps)

Prepare pancake batter

Thermomix® Setting

Add 250 g flour, 4 eggs, 500 ml milk and 1 pinch of salt to the mixing bowl and stir for 20 sec./speed 4.

Cook and mash potatoes

Peel 2 large potatoes, cut into cubes and cook until soft in a separate pot. Then drain and mash into a fine mash.

Prepare filling

Put 250 g of grated Gray cheese, Lüger cheese and Strapfen curd, the mashed potato, fresh, finely chopped chives, salt and pepper in a bowl and mix well.

Bake pancakes

Heat some oil in a pan and bake thin pancakes from the prepared batter.

Fill and fry doughnuts

Spread the filling on one half of each pancake, fold it up and fry in a pan with some oil from both sides until crispy, until the cheese inside has melted.

Serve doughnuts

Place the lumberjack doughnuts on a plate. Melt a generous piece of butter in the pan and pour over the doughnuts. Sprinkle with fresh chives and serve.
