Description

This chicken breast recipe is a delightful twist on a classic comfort food. I've been making it for years, and it's always a hit! The creamy spinach and cottage cheese filling adds a wonderful richness and flavor to the chicken. It's perfect for a cozy weeknight dinner or even a festive Christmas meal. The Cajun seasoning gives it a little kick, but you can adjust the amount to your liking. This dish is also a great way to sneak in some extra veggies! It takes about 45 minutes from start to finish, making it a relatively quick and easy meal.

Ingredients (6 ingredients)

  • 10 ounce package frozen chopped spinach, thawed
  • 0.5 piece yellow onion, chopped
  • 1 cup cottage cheese
  • 4 piece skinless, boneless chicken breast halves
  • 2 tablespoon Cajun-style seasoning
  • 2 tablespoon melted butter

Preparation (6 steps)

Prepare the spinach filling

Squeeze the excess water out of the thawed spinach. In a large bowl, mix the spinach with the chopped onion and cottage cheese. Set aside.

Season the chicken breasts

Season the chicken breasts with the Cajun-style seasoning.

Fill and secure the chicken breasts

Place 1/4 of the cheese/spinach mixture in the center of each chicken breast and fold in half. Secure with toothpicks.

Place chicken in baking dish

Place the filled chicken breasts in a lightly greased 9x13 inch baking dish.

Melt butter in Thermomix

Thermomix® Setting

Place the melted butter in the Thermomix and melt for 2 Min./50°C/Stufe 1.

Drizzle with butter and bake

Drizzle the melted butter over the chicken breasts and bake at 350 degrees F (175 degrees C) for about 25 minutes, or until chicken is cooked through and juices run clear.
