Description

These homemade alfajores are a delight that evokes childhood memories. The soft and slightly citrusy dough, combined with the creamy dulce de leche, makes them the perfect bite for any occasion. Preparing them in the Thermomix® greatly facilitates the process, ensuring a homogeneous texture and an unparalleled flavor. I often make them to share with friends and family, they are always a success! The orange zest gives it a special touch, but you can also use lemon if you prefer. The key is not to knead the dough too much so that they are tender and soft. Go ahead and try them, you won't regret it!

Ingredients (8 ingredients)

  • 160 gramos self-raising flour
  • 50 gramos sugar
  • 1 piece egg
  • 40 gramos softened butter
  • 1 cucharada sopera honey
  • to taste lemon or orange zest
  • 250 gramos dulce de leche for baking
  • icing sugar

Preparation (6 steps)

Beat the butter and sugar

Thermomix® Setting
20 sec/Speed 4

Place 40 grams of softened butter and 50 grams of sugar in the Thermomix® bowl. Beat for 20 seconds/Stufe 4 until creamy.

Incorporate egg, honey and zest

Thermomix® Setting
15 sec/Speed 3

Add 1 egg, 1 tablespoon of honey and lemon or orange zest to the Thermomix® bowl. Mix for 15 seconds/Stufe 3 until all ingredients are integrated.

Integrate the flour

Thermomix® Setting
20 sec/Speed 4

Add 160 grams of self-raising flour to the Thermomix® bowl. Mix for 20 seconds/Stufe 4. Do not knead too much, just integrate the ingredients.

Roll out and cut the dough

Remove the dough from the Thermomix® bowl. Sprinkle the counter with flour and roll out the dough with a rolling pin to a thickness of approximately 4 mm. Cut out the lids with a 5 or 6 cm circular cutter.

Cool and bake the lids

Distribute the lids on a previously buttered and floured baking sheet. Take to the refrigerator for 15 - 20 minutes. Meanwhile, preheat the oven to 180 °C. Bake the cookies for 10 minutes. They should not brown too much.

Assemble the alfajores

Let the lids cool. Place 250 grams of dulce de leche for baking on one of the discs, cover with another and press gently. Sprinkle with icing sugar.
