Description

This apple and yogurt cake is a real comfort food, perfect for breakfast or a snack. Its soft texture and enveloping aroma of caramelized apples make it irresistible. I have been preparing this cake for years and it is always a success! The apples, diced and caramelized, melt in your mouth, while the yogurt gives the dough a unique softness. The preparation is simple and quick, also ideal for those who do not have much experience in the kitchen. A perfect dessert to pamper yourself during the cold autumn days, perhaps accompanied by a cup of hot tea. Try it, you won't regret it!

Ingredients (9 ingredients)

  • 250 g Flour 00
  • 200 g Sugar
  • 1 container Natural white yogurt
  • 80 ml Seed oil
  • 5 piece Apples
  • 3 piece Eggs
  • 1 packet Baking powder
  • 1 packet Vanillin
  • 50 g Brown sugar

Preparation (8 steps)

Caramelized diced apples

Thermomix® Setting

Place 3 peeled, cored and diced 1 cm apples in the Mixtopf. Add 50 g sugar and caramelize for 10 Min./100°C/Speed 1 without measuring cup. Transfer to a bowl and set aside.

Whip eggs and sugar

3 min/Speed 4

Put 150 g sugar and egg yolks in the Mixtopf and whip for 3 Min./Speed 4, until light and fluffy. Set the egg whites aside.

Add yogurt

Add 1 jar of natural white yogurt and mix for 20 Sec./Speed 3.

Mix flour, baking powder and vanillin

Put 250 g flour 00, 1 sachet of baking powder and 1 sachet of vanillin in the Mixtopf and mix for 10 Sec./Speed 4.

Combine dry ingredients and caramelized apples

Whip egg whites

Whip the egg whites set aside with Butterfly 3 Min./Speed 3.5 until stiff peaks form.

Incorporate egg whites into the batter

Add the whipped egg whites to the batter in the Mixtopf and gently fold in for 10 Sec./Linkslauf Speed 1.

Bake the cake

Grease and flour a 26 cm cake tin and pour the cake batter into it. Peel 2 apples, core them and cut them into thin slices. Use the apple slices to decorate the surface of the cake, sprinkle brown sugar on the surface and bake in a preheated oven at 180°C for 45 minutes. Do the toothpick test to check that it is dry, otherwise continue cooking for another 5 minutes.

Apple and yogurt cake is a timeless classic, a dessert that evokes childhood memories and home scents. In my family, this cake has always had a special place. My grandmother, an exceptional cook, often prepared it, especially during the autumn, when the apples from our garden were at the peak of their sweetness. Her recipe, handed down from generation to generation, was my inspiration for this Thermomix® version, which I slightly modified to make it even softer and tastier. Flour 00 is the basis of this cake, giving it a light and delicate texture. The sugar, partly used to caramelize the apples and partly to sweeten the dough, helps to create a perfect balance between sweetness and acidity. Natural white yogurt, the secret ingredient of this recipe, gives the dough an incredible softness and a slightly acidic taste that goes perfectly with the sweetness of the apples. Seed oil, neutral in flavor, ensures that the cake remains moist and soft for a long time. Finally, the eggs bind all the ingredients and contribute to the structure of the cake. For optimal results, it is important to use good quality apples, preferably varieties such as Golden Delicious or Renetta, which maintain their shape during cooking and release an intense flavor. When caramelizing the apples in the Thermomix®, it is essential not to use the measuring cup, to allow the humidity to evaporate and obtain a perfect caramelization. During the preparation of the dough, it is important not to work the ingredients too much, to prevent the cake from becoming gummy. The use of the "Linkslauf" (reverse) function is essential to gently incorporate the ingredients and preserve the softness of the dough. To vary the recipe, you can add spices such as cinnamon, nutmeg or ginger, which go perfectly with the flavor of apples. For a vegetarian version, you can replace the yogurt with soy or coconut yogurt. For a vegan version, you can use flax eggs or aquafaba instead of eggs. The apple and yogurt cake is perfect to enjoy warm, accompanied by a scoop of vanilla ice cream or a spoonful of whipped cream. It can also be served with a cup of hot tea or coffee. It can be stored at room temperature for 2-3 days, or in the refrigerator for a week. It can also be frozen, cut into slices, to always have it available. Preparing this cake in advance is a great idea to have a dessert ready for breakfast or a snack.
