About this recipe

The "Argentinian Chicken Casserole" is a dish that reminds me of my childhood family meals. Although I am not Argentinian, my grandmother, who lived for many years in Buenos Aires, transmitted to us the love for Argentinian cuisine. This dish, with its aromas and flavors, evokes those moments of union and joy around the table. The key to this chicken casserole lies in the quality of the ingredients. The chicken thighs and drumsticks, with their juicy and tasty meat, are ideal for this type of slow cooking. The onion, red pepper and garlic provide a fundamental aromatic base, while the tomato adds acidity and body to the sauce. The white wine, or even a mild light beer, deglazes the bottom of the casserole and adds a touch of complexity to the dish. The broth, preferably homemade, hydrates and enriches the sauce. The bay leaf, sweet paprika and dried oregano are the spices that give it that characteristic Argentinian touch. For the preparation in Thermomix®, it is important to follow the steps carefully. When chopping the vegetables, be sure not to exceed the speed to prevent them from becoming a puree. When sautéing, control the temperature so they do not burn. The sweet paprika is added at the end of the sauté so that it does not become bitter. When browning the chicken in the pan, do not cook it completely, just seal the surface so that it retains its juiciness. When adding the wine, scrape the bottom of the pan well to take advantage of all the caramelized flavors. During cooking in the Thermomix®, the reverse rotation is essential to prevent the chicken from falling apart. The final reduction of the sauce at Varoma temperature concentrates the flavors and gives it a thicker texture. If you want to vary the recipe, you can add other vegetables such as carrots, mushrooms or peas. For a vegetarian or vegan version, you can substitute the chicken with seitan, firm tofu or even chickpeas. As for the spices, you can experiment with cumin, ground chili or smoked paprika. This chicken casserole is traditionally served with white rice, mashed potatoes or creamy polenta. You can also accompany it with a fresh salad or homemade French fries. A good Argentinian red wine, such as a Malbec or a Cabernet Sauvignon, pairs perfectly with this dish. If you have leftover chicken, you can store it in an airtight container in the refrigerator for a maximum of three days. You can also freeze it for later consumption. To reheat, you can use the microwave, pan or oven. This dish can also be prepared in advance and reheated just before serving, making it an ideal option for family meals or gatherings with friends.
