Description

This asparagus recipe is a poem for spring! The green asparagus, tender and crisp, harmonizes wonderfully with the fruity grape vinaigrette. Dried tomatoes and fresh basil bring a Mediterranean touch to the game, while roasted walnuts provide the necessary bite. The air-dried ham rounds off the dish perfectly. Ideal as a light starter or as a main course for a spring brunch. The preparation is uncomplicated and succeeds in no time at all. An absolute must for all asparagus lovers!

Ingredients (10 ingredients)

  • 1000 g green asparagus
  • 2 tbsp Salt
  • 8 tbsp Grape vinegar
  • 4 tbsp Pepper
  • 80 g dried Tomatoes
  • 0.5 Topf Basil
  • 75 g Walnuts
  • 8 slice air-dried Ham
  • 1 tbsp Sugar
  • 500 ml Water

Preparation (7 steps)

Prepare asparagus

Wash 1 kg of green asparagus and cut off the woody ends.

Cook asparagus

Thermomix® Setting
7 min/Varoma/Speed 1 Varoma

Put 500 ml of water, 2 tbsp of salt and 1 tbsp of sugar into the mixing bowl and bring to the boil for 5 min./100°C/speed 1. Place the prepared asparagus in the steamer basket and steam for 7 min./Varoma/speed 1.

Prepare vinaigrette

Thermomix® Setting
10 sec/Speed 3

Put 8 tbsp grape vinegar, 3 tbsp asparagus water (remove from the mixing bowl), 4 tbsp pepper, 1 tbsp sugar and salt to taste in the mixing bowl and mix for 10 sec./speed 3.

Add tomatoes and basil

5 sec/Speed 3 Reverse

Cut 80 g of dried tomatoes into strips and add to the vinaigrette in the mixing bowl. Wash 0.5 pot of basil, shake dry, pluck the leaves from the stems, set aside a few for garnish. Cut the remaining leaves into fine strips and add to the mixing bowl as well. Mix for 5 sec./speed 3 reverse.

Marinate asparagus

Drain the cooked asparagus and mix with the vinaigrette from the mixing bowl. Let it marinate for about 10 minutes.

Roast walnuts

Roughly chop 75 g of walnuts and roast in a pan without oil. Set aside.

Arrange

Arrange asparagus with 8 slices of air-dried ham. Sprinkle roasted walnuts and remaining basil on top. Baguette bread tastes good with it.
