Description

This eggplant ratatouille is a delicious and versatile dish that is ideal as a main course or side dish. With fresh eggplants, zucchini, peppers and aromatic herbs, it is a treat for every taste. Preparation in the Thermomix® takes about 60 minutes and yields 4 servings. The dish is vegetarian and can easily be made vegan, perfect for a light and healthy meal.

Ingredients (13 ingredients)

  • 250 g Eggplant
  • 250 g Zucchini
  • 250 g Bell pepper
  • 250 g Onion
  • 2 Zehen Garlic
  • 400 g Chunky tomatoes
  • 40 ml Olive oil
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 piece Bay leaf
  • 200 g Meat

Preparation (11 steps)

Prepare vegetables

Wash the eggplants, zucchini, peppers and onions and cut into bite-sized pieces. Peel the garlic cloves. Cut the meat into bite-sized pieces.

Fry the meat

Fry the meat in a separate pan with a little oil until it has browned. Then set aside.

Chop onions

Put 250 g of onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40 ml olive oil to the chopped 250 g onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop garlic

Add 2 cloves of garlic to the sautéed onions in the mixing bowl and chop for 3 sec./speed 7.

Add eggplants and zucchini

Add 250 g eggplant and 250 g zucchini in pieces and chop for 5 sec./speed 4.

Add bell pepper

Thermomix® Setting

Add 250 g of bell peppers in pieces and chop for 5 sec./speed 4.

Add tomatoes and spices

Add 400 g chunky tomatoes, 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano, 1 tsp thyme and 1 bay leaf to the vegetables in the mixing bowl.

Simmer ratatouille

25 min/212°F/Linkslauf/Speed 1 212°F Reverse

Close the mixing bowl and simmer the ratatouille for 25 min./100°C/reverse rotation/speed 1. Leave the measuring cup on.

Add meat

5 min/212°F/Linkslauf/Speed 1 212°F Reverse

Add the previously fried meat to the ratatouille in the mixing bowl and heat for a further 5 min./100°C/reverse rotation/speed 1. Leave the measuring cup on.

Season and serve

Remove the bay leaf. Season the ratatouille with salt and pepper and serve.
