Description

This dish of braised veal rolls with vegetables is a comforting classic, perfect for autumn evenings. I often prepare it when I want a simple and tasty braised dish. The veal rolls, tender and soft, soak up the flavors of the vegetables and white wine. The potatoes and carrots add a touch of sweetness and texture. It is a complete and balanced dish, ideal for a family meal. Cooking in a pressure cooker saves time while preserving the flavors. A real delight!

Ingredients (11 ingredients)

  • 4 piece veal rolls
  • 4 piece potatoes
  • 1 grand verre water
  • 0.5 verre white wine
  • 1 noisette butter
  • 1 piece carrot
  • 2 piece shallots
  • 1 piece onion
  • 1 bouquet bouquet garni
  • 1 pinch fine salt
  • 1 pinch pepper

Preparation (4 steps)

Preparing the vegetables

Thermomix® Setting

1 onion, 2 shallots and 1 carrot in the bowl and chop for 5 Sek./Stufe 5. Scrape the sides of the bowl with the spatula.

Searing the vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a knob of butter to the bowl and sauté the chopped vegetables for 3 Min./120°C/Stufe 1.

Adding the potatoes and bouquet garni

Cut 4 potatoes into rounds and add them to the bowl with 1 bouquet garni. Also add ½ glass of white wine and 1 large glass of water. Salt and pepper.

Cooking the veal rolls

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Place the veal rolls in the Varoma. Close the Varoma and place it on the bowl. Steam for 30 Min./Varoma/Stufe 1.
