Description

This flavored cauliflower with curry yogurt is an absolute highlight! I like to make it as a side dish to Indian dishes or simply as a light main course. The Madras curry powder, cardamom and cinnamon give the cauliflower a wonderful warmth and depth. The yogurt with lime juice provides a refreshing note. It tastes especially delicious when the cauliflower is still slightly warm. A great dish for those who like it spicy and aromatic. And the best thing: it's super easy to prepare!

Ingredients (9 ingredients)

  • 1 piece Cauliflower
  • 2 tsp Madras curry powder
  • 3 piece Cardamom capsule(s)
  • 1 Stange(n) Cinnamon stick(s)
  • 20 ml Sesame oil
  • 50 g Butter
  • 125 g Yogurt
  • 1 piece Lime(s) Juice from it
  • 1.5 bunch Coriander

Preparation (6 steps)

Prepare spice oil

Thermomix® Setting
10 min/212°F/Speed 1 100

Add sesame oil and butter to the mixing bowl. Add Madras curry powder, cardamom capsules and cinnamon stick and heat for 10 min./100°C/speed 1 so that the flavors develop.

Prepare cauliflower

Divide the cauliflower into florets and place in a pot with salted water. Simmer on the stove for about 15 minutes until al dente. Then drain and let it drip.

Brush cauliflower

Place the warm, drained cauliflower in a bowl and brush with the spice oil from the mixing bowl. Make sure that all florets are well covered.

Bake cauliflower

Spread the cauliflower brushed with spice oil on a baking sheet and bake in a preheated oven at 160 °C circulating air for about 30 minutes until lightly browned.

Prepare yogurt

Thermomix® Setting
10 sec/Speed 3

Add yogurt to the mixing bowl and add lime juice. Stir for 10 sec./speed 3.

Serve

Serve the baked cauliflower with the yogurt and fresh coriander.
