Description

This sliced pork in red wine sauce is a hearty main course prepared with the Thermomix®. The dish is ideal for a festive dinner and offers a rich sauce with tender pork. The preparation time is about 45 minutes and the recipe is designed for 4 servings. Perfect for lovers of savory cuisine.

  • 500 g Pork tenderloin
  • 250 g Onions
  • 2 Stück Cloves of garlic
  • 1 Stange Leek
  • 1 Stange Celery stalk
  • 150 g Mushrooms
  • 40 g Oil
  • 200 ml Red wine
  • 200 ml Water
  • 1 EL Tomato paste
  • 1 TL Mustard
  • 1 TL Paprika powder
  • 0.5 TL Salt
  • 0.25 TL Pepper
  • 0.5 TL Thyme
  • 1 Stück Bay leaf
  • 1 EL Cornstarch
  • 100 g Cream

Preparation (8 steps)

Prepare onions and garlic

Put 250g onions in the mixing bowl and chop for 3 sec./level 5. Scrape down from the edge with the spatula.

Sauté onions

Add 40g oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add garlic

Thermomix® Setting

Add 2 cloves of garlic to the onions in the mixing bowl and chop for 3 sec./level 7. Scrape down from the edge with the spatula.

Add vegetables and sauté

Add 1 stalk of leek, 1 stalk of celery and 150g of mushrooms, sliced, to the mixing bowl and sauté for 5 min./120°C/level 1.

Fry meat

Cut 500g pork tenderloin into bite-sized pieces and fry in a separate pan with some oil until it has taken on color. Then add to the vegetables in the mixing bowl.

Prepare sauce

20 min/212°F/Speed 1 212°F Reverse

Add 200ml red wine, 200ml water, 1 tbsp tomato paste, 1 tsp mustard, 1 tsp paprika powder, 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp thyme and 1 bay leaf to the remaining ingredients in the mixing bowl and cook for 20 min./100°C/level 1 reverse. Leave the measuring cup on.

Thicken sauce

5 min/212°F/Speed 1 212°F Reverse

Mix 1 tbsp cornstarch with some cold water and add to the mixing bowl. Cook for another 5 min./100°C/level 1 reverse. Leave the measuring cup on.

Season and refine

Thermomix® Setting
1 min/194°F/Speed 1 194°F Reverse

Add 100g cream to the mixing bowl and stir in for 1 min./90°C/level 1 reverse. Season with salt and pepper. Remove bay leaf.
