Description

This pumpkin chili is an absolute highlight in autumn! The sweetness of the pumpkin harmonizes wonderfully with the spiciness of the chili and the spicy aromas of cumin and oregano. I like to make it again and again because it is so easy to prepare and the whole family is enthusiastic. The kidney beans and corn make the chili nice and filling. It is then perfectly rounded off with a dollop of sour cream and fresh coriander. A great dish for cozy evenings!

Ingredients (16 ingredients)

  • 2 piece red onions
  • 0.5 bunch Oregano
  • 4 piece red chili peppers
  • 800 g Hokkaido
  • 255 g Kidney beans
  • 285 g Corn
  • 4 tbsp Oil
  • 2 tsp brown sugar
  • 1 tbsp Cumin (ground)
  • 2 tbsp Tomato paste
  • 400 g chunky tomatoes
  • to taste Salt
  • to taste Pepper
  • 1 bunch Coriander
  • 1 piece Organic lemon
  • 200 g Sour cream

Preparation (8 steps)

Prepare Onions, Chili and Oregano

Peel 2 red onions, halve and place in the mixing bowl. Chop 3 sec./speed 5. Wash 0.5 bunch of oregano, shake dry and pluck the leaves. Halve 4 red chili peppers lengthwise, remove the seeds and cut into fine slices.

Prepare pumpkin

Wash 1 Hokkaido pumpkin (approx. 800 g), halve and scrape out the seeds with a spoon. Cut the pulp into approx. 2 cm cubes.

Sauté pumpkin

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 4 tbsp oil in the mixing bowl and heat 3 min./120°C/speed 1. Then add the pumpkin cubes and sauté for 3 min./120°C/speed 1.

Add onions, chili and spices

Add the chopped onions, chili, 2 tsp brown sugar, 1 tbsp cumin (ground), oregano leaves and 2 tbsp tomato paste and sauté for 1 min./120°C/speed 1.

Simmer chili

30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 1 can of chunky tomatoes (400 g), season with salt and pepper and simmer for 30 min./100°C/speed 1/reverse.

Add beans and corn

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Drain 1 can of kidney beans (255 g) and 1 can of corn (285 g) and add to the mixing bowl. Bring everything to a boil for 5 min./100°C/speed 1/reverse.

Prepare coriander sour cream

Wash 1 bunch of coriander, pat dry and chop finely. Wash 1 organic lemon, rub dry and finely grate the zest. Put 200 g of sour cream in a bowl and mix with coriander and lemon zest.

Season and serve

Season the chili con pumpkin with salt and pepper and serve with the coriander sour cream.
