Description

This clafoutis with cherries and fresh mint is a quintessential summer dessert. I love the combination of juicy cherries and refreshing mint, which brings a touch of originality to this classic. The batter is light and creamy, and preparation is really simple with the Thermomix®. It is a perfect dessert for a Sunday brunch or an afternoon snack with friends. It can be enjoyed warm or cold, depending on your preference. Do not hesitate to use fresh seasonal cherries for optimal taste. A real treat for the taste buds!

Ingredients (9 ingredients)

  • 25 g butter
  • 1 kg cherries
  • to taste fresh mint leaves
  • 1 trait cream
  • 1 packet vanilla sugar
  • 0.5 l milk
  • 4 piece eggs
  • 150 g sugar
  • 180 g flour

Preparation (4 steps)

Preparation of the cherries

Preheat the oven to 210°C. Pit 1 kg of cherries and arrange them in the bottom of a mold covered with a sheet of parchment paper.

Preparation of the batter

Thermomix® Setting
20 sec/Speed 4

Put 180g of flour in the Thermomix bowl. Add 4 eggs, 150g of sugar, 1 packet of vanilla sugar, ½ l of milk and 1 dash of cream. Mix 20 Sec./Stufe 4.

Addition of mint

Thermomix® Setting
10 sec/Speed 2

Add a few fresh mint leaves, chopped into very small pieces, to the mixture in the Thermomix bowl. Mix gently 10 Sec./Stufe 2.

Cooking the clafoutis

Pour the batter over the cherries in the mold. Distribute 25g of butter in small pieces on top. Bake in the preheated oven for 50 minutes at 210°C.
