Description

This Galician stew is a comforting spoon dish, perfect for cold winter days. The combination of pork, beef, chicken and vegetables creates a tasty and nutritious broth. Traditionally, the meat is served on one side and the vegetables with the chickpeas on the other, allowing you to enjoy each ingredient separately. The key is the cooking time of each meat so that it is tender and juicy. An ideal dish to share with the family and enjoy authentic Galician cuisine!

Ingredients (14 ingredients)

  • 1 piece Pork rib
  • 1 piece Pork ear
  • 1 piece Pork snout
  • 1 piece Pork spine (soá)
  • 2 piece Chorizos
  • 1 piece Pumpkin chorizo
  • 1 piece Cured pork shoulder
  • 1 piece Chicken drumstick
  • 1 piece Cabbage
  • 5 piece Whole potatoes
  • 1 trozo Unto
  • 1 trozo Veal shank
  • Water
  • Salt

Preparation (8 steps)

Desalting the pork

Leave the pork in soak for approximately 12 hours to desalt it. Change the water several times during this time.

Initial cooking of the meat

Thermomix® Setting
120 min/212°F/Speed 1 212°F

Place the pork rib, the pork ear, the pork snout, the pork spine (soá) and the veal shank in the Thermomix bowl. Cover with water and add salt. Program 120 Min./100°C/Stufe 1.

Add the chicken

Thermomix® Setting
60 min/212°F/Speed 1 212°F

Add the chicken drumstick to the Thermomix bowl. Program 60 Min./100°C/Stufe 1.

Remove and reserve the meat

Remove the meat from the Thermomix bowl as it is done and reserve. Strain the broth and reserve.

Cooking the vegetables and chorizos

Thermomix® Setting
30 min/212°F/Speed 1 212°F

Pour the strained broth back into the Thermomix bowl. Add the whole potatoes, the cabbage in quarters, the chorizos and the pumpkin chorizo. Program 30 Min./100°C/Stufe 1.

Remove the chorizos

Remove the chorizos from the Thermomix bowl after 20 minutes and reserve.

Heat the chickpeas

Thermomix® Setting
5 min/158°F/Speed 1 158°F

If the chickpeas are cooked, wash them well and heat them in the Thermomix with a little of the stew broth. Program 5 Min./70°C/Stufe 1.

Serve

Serve the meat on one side and the vegetables with the chickpeas on the other. Enjoy this delicious Galician stew.
