Description

These Brazilian red beans with pork are a hearty and flavorful dish, perfect for cold days. The combination of the beans with pork, chorizo, and ham creates an explosion of flavors that will transport you to Brazil. The preparation takes time, as the beans must be soaked overnight, but the end result is worth it. I usually prepare a good amount and freeze portions to always have a comforting meal on hand. Accompany them with white rice and avocado for a complete experience!

Ingredients (8 ingredients)

  • 1 libra red ball dried bean
  • 0.5 libra pork pulp meat
  • 2 piece fat-free chorizo sausages
  • 0.5 libra ham
  • 2 copas white wine
  • 1 piece sweet orange juice
  • 1 pinch chili pepper
  • 1 piece hogao (tomato, round onion, garlic, tomato sauce, bay leaf and thyme to taste)

Preparation (6 steps)

Bean soaking

Leave 1 pound of red ball dried beans soaking in water from the night before (approximately 8 hours).

Meat preparation

Cut 1/2 pound of pork pulp meat (or ribs), 2 fat-free chorizo sausages and 1/2 pound of ham into pieces. In a pan, sauté the marinated meats with 2 glasses of white wine for 5 minutes over medium heat. Reserve.

Hogao preparation

For the hogao, add tomato, round onion, garlic, tomato sauce, bay leaf and thyme to taste to the glass. Crush 5 seconds/Stufe 5. Then, sauté in a pan over low heat until a thick sauce is obtained. Reserve.

Bean cooking

Thermomix® Setting
45 min/212°F/Speed 1/Linkslauf 100 Reverse

Place the soaked and drained beans in the Thermomix glass. Add water to cover the beans, the reserved hogao sauce and the sautéed meats. Cook 45 Min./100°C/Stufe 1/Linkslauf.

Checking and adjustment

Thermomix® Setting
15 min/212°F/Speed 1/Linkslauf 100 Reverse

Check if the beans are soft. If they are not, cook for an additional 15 Min./100°C/Stufe 1/Linkslauf.

Serve

At the end, add chili pepper to taste. Serve the hot beans accompanied by white rice and avocado.
