Description

I love preparing this creamy pasta with courgette and almond pesto! It is a fresh and light summer dish, perfect for a quick lunch or an informal dinner. Grated courgettes, toasted almonds and fresh basil come together in a creamy and tasty pesto that envelops the pasta. The preparation is very simple and quick, ideal when you have little time available. A touch of grated pecorino cheese completes the dish, giving an intense and irresistible flavour. Try it, it will win you over!

Ingredients (8 ingredients)

  • 320 g Pasta
  • 30 g Flaked almonds
  • 500 g Courgettes
  • 50 g Peeled almonds
  • 50 ml Extra virgin olive oil (EVO)
  • 50 g Grated pecorino cheese
  • 1 bunch Basil
  • 1 pinch Fine salt

Preparation (6 steps)

Grated courgettes

Wash and top the courgettes, then cut them into pieces and put them in the bowl. Grate the courgettes: 5 Sec./Speed 5. Transfer the pulp obtained to a colander and squeeze it well to eliminate the vegetation water.

Pesto preparation

20 Sec./Speed 8

Transfer the squeezed courgette pulp into the bowl. Add a few fresh basil leaves, fine salt, peeled almonds, grated pecorino cheese and extra virgin olive oil. Blend: 20 Sec./Speed 8. Check the consistency and, if necessary, blend again for a few seconds.

Toasting the almonds

Toast the flaked almonds in a non-stick pan over low heat for a few minutes, until golden and fragrant. Alternatively, they can be toasted in the oven at 180°C for about 5 minutes. Set aside.

Cooking the pasta

Meanwhile, cook the pasta in abundant boiling salted water according to the instructions on the packet.

Pasta dressing

Drain the pasta al dente, reserving a ladle of cooking water. Pour the courgette pesto into a large bowl, add a ladle of pasta cooking water and mix. Add the drained pasta and mix well.

Plating

Plate the pasta with courgette and almond pesto, garnishing with a sprinkling of toasted flaked almonds!
