Description

This caramel cream is a real classic and a poem for every dessert lover! I especially like to make it for festive occasions because it is easy to prepare and still brings something special to the table. The combination of melt-in-your-mouth caramel and creamy vanilla pudding base is simply unbeatable. Preparing it in the Thermomix® makes the whole thing even easier, as the ingredients are perfectly mixed and heated. With the caramelized hazelnuts and fresh lemon balm, the cream becomes a true delight. An absolute must for anyone who loves it sweet and creamy!

Ingredients (9 ingredients)

  • 350 g Sugar
  • 3 tbsp Lemon juice
  • 3 piece Eggs (Size M)
  • 6 piece Egg yolks
  • 400 g Whipping cream
  • 350 ml Milk
  • 40 g Hazelnuts
  • Lime slices for garnish
  • Lemon balm for garnish

Preparation (10 steps)

Caramelize sugar

Thermomix® Setting
8 min/248°F/Speed 1 120

Put 175 g sugar in the mixing bowl and caramelize without the lid for 8 Min./120°C/Speed 1. Keep a close eye on the sugar so that it does not burn.

Deglaze caramel

Thermomix® Setting
1 min/122°F/Speed 2 50

Add 2 tbsp lemon juice and 3 tbsp hot water to the caramelized sugar in the mixing bowl and mix for 1 Min./50°C/Speed 2 until the caramel has completely dissolved. Then pour the caramel into a greased, ovenproof dish (approx. 1 liter capacity).

Let caramel cool

Set the dish with the caramel aside and let it cool until the caramel has set. This takes about 30 minutes.

Prepare cream

Thermomix® Setting
20 sec/Speed 4

Put 3 eggs, 6 egg yolks, 400 g whipping cream, 350 ml milk and 120 g sugar in the mixing bowl and mix for 20 Sec./Speed 4.

Pour cream into the dish

Carefully pour the cream onto the cooled caramel in the dish.

Let set in a water bath

Place the dish in a water bath (the dish should be about halfway in the water) and let it set in the preheated oven (electric oven: 175 °C) for approx. 90 minutes.

Caramelize nuts

2 min/248°F/Linkslauf Speed 1 120 Reverse

In the meantime, put the remaining sugar (55g) in the mixing bowl and let it caramelize without the lid for 5 Min./120°C/Speed 1. Add the hazelnuts and brown for 2 Min./120°C/Reverse Speed 1.

Refine nuts

Thermomix® Setting
10 sec/Speed 2

Add the remaining lemon juice (1 tbsp) to the caramelized nuts in the mixing bowl and mix for 10 Sec./Speed 2.

Cool and chop nuts

Remove the nuts from the mixing bowl, let them cool slightly and chop coarsely.

Turn out cream and garnish

Take the cream out of the oven, let it cool slightly and then turn it out of the mold. Spread the chopped nuts on top and garnish with lime slices and lemon balm.
