Description

This apricot quark dessert is a real eye-catcher and tastes simply delicious! I especially like to make it in the summer when the apricots are nice and juicy. The crunchy almond shortbread base harmonizes perfectly with the creamy quark cream and the fruity apricots. A dash of elderflower syrup adds a fine, floral note. The dessert can be prepared well in advance and is ideal for birthdays or other festive occasions. If you like, you can add a few fresh berries.

Ingredients (12 ingredients)

  • 50 g chopped almonds
  • 150 g Shortbread
  • 2 Dosen Apricots
  • 425 ml to
  • 100 ml Elderflower syrup
  • 200 g Whipping cream
  • 600 g Quark
  • 2 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 3 tbsp Icing sugar
  • 1 Pck. Vanilla sugar
  • 50 g Pistachios

Preparation (7 steps)

Roast almonds

Thermomix® Setting
5 min/248°F/Speed 1 120

Put 50 g chopped almonds into the mixing bowl and roast for 5 min./120°C/speed 1 without the measuring cup. Then transfer to a bowl and set aside.

Chop shortbread

Thermomix® Setting
10 sec/Speed 6

Put 150 g shortbread into the mixing bowl and chop for 10 sec./speed 6. Mix with the roasted almonds and divide into 8 glass bowls (à approx. 200 ml).

Prepare apricots

Drain 2 cans (à 425 ml) apricots and, except for 8 pieces, finely dice. Spread apricot cubes on the shortbread. Drizzle with 100 ml elderflower syrup and let sit for about 1 hour.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3,5

Put 200 g whipping cream into the mixing bowl and whip with the butterfly for 2 min./speed 3.5 until stiff. Transfer to a bowl and refrigerate.

Prepare quark cream

Thermomix® Setting
20 sec/Speed 3

Put 600 g quark, 2 tbsp lemon juice, 1 tsp lemon zest, 3 tbsp icing sugar and 1 pack vanilla sugar into the mixing bowl and stir for 20 sec./speed 3.

Fold in cream

Carefully fold the whipped cream into the quark cream and spread the cream into the glasses.

Finish dessert

Put 50 g pistachios into the mixing bowl and chop for 3 sec./speed 5. Place remaining apricots on the cream as "egg yolk". Sprinkle with pistachios and serve.
