Description

This creamy buffalo chicken pasta is a flavor explosion! I've been making this dish for potlucks and casual dinners for years, and it's always a hit. The combination of the tangy buffalo sauce, creamy cheese, and tender chicken is simply irresistible. It's quick to prepare, making it perfect for busy weeknights. Feel free to adjust the amount of buffalo sauce to your liking – I like mine with a good kick! This pasta is also great for meal prepping; it reheats beautifully. A truly comforting and satisfying meal!

Ingredients (10 ingredients)

  • 2 cups rigatoni pasta
  • 2 cups shredded cooked chicken breast
  • 1 tsp dry ranch salad dressing mix
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 8 ounce Neufchatel cheese
  • 8 ounce sour cream
  • 0.5 cup Buffalo wing sauce
  • 0.5 cups shredded sharp Cheddar cheese

Preparation (5 steps)

Cook the pasta

Bring a large pot of water to a boil and cook the pasta according to package directions. Drain the pasta and set aside.

Season the chicken

In a bowl, combine 2 cups of shredded cooked chicken breast with 1 tsp of dry ranch salad dressing mix, 1 tsp of salt, 0.5 tsp of black pepper, and 0.5 tsp of garlic powder. Mix well to coat the chicken evenly and set aside.

Prepare the cheese sauce

Add 1 (8 ounce) package of Neufchatel cheese, 1 (8 ounce) container of sour cream, and 0.5 cup of buffalo wing sauce to the Thermomix bowl. Cook for 3 Min./60°C/Stufe 3, stirring constantly, until well combined.

Melt the cheddar cheese

Add 0.5 cup of shredded sharp Cheddar cheese to the Thermomix bowl. Cook for 1 Min./60°C/Stufe 2 until the cheese is melted and the sauce is smooth.

Combine pasta and chicken

2 min/140°F/Linkslauf Speed 1 60 Reverse

Add the cooked rigatoni pasta and seasoned chicken to the Thermomix bowl. Cook for 2 Min./60°C/Linkslauf Stufe 1, stirring gently, until the pasta and chicken are well incorporated and heated through.
