Description

This dark chocolate sour cream layer cake is a rich and decadent treat, perfect for birthdays or any special occasion.   • 1 cup unsweetened cocoa powder
  • 1 cup boiling water
  • 2.5 cups white sugar
  • 1 cup canola oil
  • 4 piece eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup sour cream
  • 2 cups unsalted butter, slightly softened
  • 2 cups confectioners' sugar
  • 0.25 tsp salt

Prepare Baking Pans

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round baking pans. This step is done outside of the Thermomix to prepare for baking.

Dissolve Cocoa Powder

Dissolve 1 cup of unsweetened cocoa powder in 1 cup of boiling water in a bowl; set aside to cool completely. This step is done outside of the Thermomix to allow the mixture to cool.

Cream Sugar and Oil

Add 2 ½ cups of white sugar and 1 cup of canola oil to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until smooth.

Add Eggs

Add 4 eggs, one at a time, to the Thermomix bowl, mixing for 15 Sec./Stufe 3 after each addition.

Incorporate Vanilla

Add 2 teaspoons of vanilla extract to the Thermomix bowl and mix for 10 Sec./Stufe 3.

In a separate bowl, sift together 3 cups of all-purpose flour, 2 teaspoons of baking soda, ½ teaspoon of baking powder, and ½ teaspoon of salt. This step is done outside of the Thermomix to ensure even distribution of the dry ingredients.

Pour Batter into Pans

Pour the batter evenly into the prepared baking pans. This step is done outside of the Thermomix to prepare for baking.

Bake Cakes

Bake in the preheated oven until a toothpick inserted in the center of each cake comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. Wrap cakes in plastic wrap and store in the refrigerator. This step is done outside of the Thermomix.

Cream Butter for Frosting

Add 2 cups of unsalted butter, slightly softened, to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until creamy and smooth. Use the spatula to scrape down the sides of the bowl as needed.

Incorporate Confectioners' Sugar

20 sec/Speed 3

Add 2 cups of confectioners' sugar, ½ cup at a time, to the Thermomix bowl, mixing for 20 Sec./Stufe 3 after each addition until the sugar is incorporated. Use the spatula to scrape down the sides of the bowl as needed.

Add Salt and Beat Frosting

3 min/Speed 4

Add ¼ teaspoon of salt to the Thermomix bowl and mix on medium-high (Stufe 4) until the frosting is light and fluffy, about 3 Min./Stufe 4.

Assemble Cake

Place one cake on a serving plate; spread 1/4 of the frosting on top of the cake. Place the second cake on the frosting layer; spread 1/4 of the frosting on the second cake. Place the third cake atop the second cake. Spread the remaining frosting on top of the cake and around the sides of the entire layer cake. This step is done outside of the Thermomix.
