Description

These delicious sweet spirals, perfect for breakfast or a special brunch, are a true delight for the palate. The combination of 00 flour and manitoba flour gives a soft and light consistency, while the butter makes them rich and flavorful. The preparation requires some time for leavening, but the final result is absolutely rewarding. Ideal to enjoy with a cup of coffee or tea, these spirals are a great alternative to classic croissants. A touch of sweetness that will conquer everyone!

Ingredients (9 ingredients)

  • 250 g 00 flour
  • 250 g manitoba flour
  • 1 packet dry brewer's yeast
  • 1 piece eggs
  • 250 ml milk
  • 70 g sugar
  • 140 g butter
  • fine salt
  • 30 ml lukewarm milk

Mix the flours and yeast

Insert the 00 flour, manitoba flour and dry brewer's yeast into the bowl. Mix for 10 Sec./Stage 3.

Add the egg

Incorporate the milk

Add the milk a little at a time into the bowl. Set 2 Min./Stage 3 and gradually pour in the milk.

Add sugar and salt

Thermomix® Setting
1 min/Speed 3

Add the sugar and salt into the bowl. Set 1 Min./Stage 3 and continue to knead.

Transfer the dough

Transfer the dough to a floured pastry board and knead by hand for a few minutes. No Thermomix setting required.

Incorporate the butter

Roll out the dough and add 60 g of softened butter in small pieces. Knead by hand until a smooth mixture is obtained. No Thermomix setting required.

First leavening

Form a ball, put it in a buttered bowl and cover with food film. Leave to rise until doubled in volume (about 2-3 hours). No Thermomix setting required.

Divide the dough

Take the leavened dough and place it on the floured pastry board. Divide the dough into 8 portions. No Thermomix setting required.

Form the strips

Form balls, then roll them out with your hands and with a rolling pin to make elongated and thin strips. No Thermomix setting required.

Spread the butter

Divide 80 g of soft butter on the dough strips and spread it with a spatula so as to cover them completely. No Thermomix setting required.

Roll the strips

Roll the strips tightly and form rolls. No Thermomix setting required.

Freeze the rolls

Put the rolls on a cutting board lined with baking paper and store in the freezer for half an hour. No Thermomix setting required.

Cut the rolls

After the resting time, take the rolls and cut them in half lengthwise using a smooth-bladed knife. No Thermomix setting required.

Form the braids

Cross the two strips obtained to form a sort of braid, then close it in a ring. No Thermomix setting required.

Insert into the cupcake liners

Put each braid in the cupcake liners. No Thermomix setting required.

Second leavening

Insert the cupcake liners into a muffin tin and cover with food film. Leave to rise for another 30-40 minutes. No Thermomix setting required.

Brush and bake

Brush the surface of each spiral with lukewarm milk. Bake in a static oven preheated to 180 °C for 15 minutes, or in a ventilated oven at 170 °C for the same time. No Thermomix setting required.
