Description

These homemade pumpkin gnocchi are a real treat! I especially like to make them in the fall when pumpkins are in season. The combination of sweet pumpkin and potatoes, refined with nutmeg and cheese, is simply irresistible. The preparation is a bit more complex, but the result is worth it. Served with sage butter or a light tomato sauce, they are a perfect vegetarian main course. They taste delicious and are a real eye-catcher on the plate. A recipe that I always enjoy making!

Ingredients (7 ingredients)

  • 600 g cooked pumpkin
  • 200 g cooked potatoes
  • 1 piece eggs
  • 30 g grated cheese
  • 300 g 00 flour
  • nutmeg
  • fine salt

Preparation (5 steps)

Prepare pumpkin and potatoes

Cut 600 g of cooked pumpkin into pieces and place in a glass bowl. Add a tablespoon of water. Cover with cling film and cook in the microwave at maximum power for 8 minutes, stirring halfway through. Cut 200 g of cooked potatoes into pieces, place in a separate glass bowl, add a tablespoon of water, cover and cook in the microwave for 4 minutes.

Purée pumpkin and potatoes

Place the cooked pumpkin and potatoes in the mixing bowl and purée for 20 sec/speed 5. Scrape down the sides with the spatula.

Prepare gnocchi dough

Thermomix® Setting
2 min/Kneading speed

Add 1 egg, 30 g grated cheese, 300 g Type 00 flour, nutmeg to taste and salt as needed to the mixing bowl. Process for 2 min/kneading stage to form a dough.

Shape gnocchi

Remove the dough from the mixing bowl and shape it into a roll on a floured work surface. Cut small pieces from the roll and shape into gnocchi. Press grooves in with a fork if desired.

Cook gnocchi

Bring salted water to a boil in a large pot. Add the gnocchi in portions and cook until they rise to the surface. Remove with a slotted spoon and serve.
