Description

This grated apple and pear cake from the Thermomix® is a fruity delight with apples, pears, sugar, and butter. The recipe is vegetarian and ideal for an autumn coffee break or festive occasions. The preparation time is 120 minutes, of which 60 minutes is active working time, and yields 24 servings. Perfect for anyone who loves a juicy cake with fresh fruit.

  • 800 g tart apples
  • 800 g pears
  • 80 g sugar
  • 1 Päckli vanilla sugar
  • 400 g butter, soft
  • 350 g sugar
  • 0.25 TL salt
  • 1 Stück vanilla bean
  • 6 Stück eggs
  • 400 g flour
  • 2 TL baking powder
  • 200 g crème fraîche
  • 2 Stück eggs
  • 2 EL cornstarch
  • 4 EL rum, optional
  • powdered sugar for dusting

Preparation (14 steps)

Prepare apples and pears

Grate the apples and pears, including the peel, with a coarse grater and put them in a bowl.

Mix sugar and let sit

Add sugar and vanilla sugar to the grated apples and pears and mix well. Cover and let sit for about 30 minutes.

Preheat oven

Preheat the oven to 180°C (350°F).

Stir butter, sugar, and salt

Place butter, sugar, and salt in the mixing bowl and stir with the butterfly whisk for 2 minutes / speed 3.

Add vanilla

Cut the vanilla bean lengthwise, scrape out the seeds, and add them to the mixing bowl. Stir for 10 sec/speed 3.

Stir in eggs

Add the eggs one at a time and stir for 20 sec/speed 3 each time until the mixture is lighter.

Mix flour and baking powder

Mix the flour and baking powder in a separate bowl.

Stir in flour mixture

Add the flour mixture to the mixing bowl and stir for 20 sec/speed 3.

Pour batter into pan

Pour the batter into a greased springform pan (approx. 4.5 liters).

Prepare crème fraîche mixture

In a bowl, whisk together the crème fraîche, eggs, and cornstarch.

Squeeze out apple-pear juice

Squeeze the set-aside apples and pears well in a sieve, collecting the juice.

Stir in apple-pear mixture

Mix the apples and pears into the crème fraîche mixture and spread on the batter.

Baking

Bake the cake in the lower half of the oven for about 1 hour.

Cool and refine

Remove, let cool slightly, sprinkle the still-warm cake with rum. Remove the edge of the pan, let the cake cool on the bottom of the pan. Dust with powdered sugar.
