Description

This Peruvian-style chicken ceviche is an explosion of fresh and vibrant flavors. The juiciness of the cooked chicken combines with the acidity of the lemon, the spicy touch of the chili and the creaminess of the avocado. It is a light and refreshing dish, perfect for hot summer days or as an elegant appetizer for any occasion. I have been preparing it for years and it is always a success in my family gatherings. In addition, it is very easy to make with the Thermomix®, which makes it an ideal option for those looking for a quick and delicious recipe. Go ahead and try it and surprise your guests!

Ingredients (14 ingredients)

  • 1 piece Bone-in chicken breast
  • 1 piece Avocado
  • 1 cucharada sopera Fresh cilantro
  • 1 cucharadita Oregano
  • 1 pinch Paprika
  • 1 pinch Red pepper
  • 1 pinch Ginger
  • 4 piece Lemons
  • 4 cucharadas soperas Toasted corn
  • 1 cucharada sopera Cream cheese
  • 1 piece Red onion
  • 1 pinch Garlic powder
  • 1 pinch Black pepper
  • 1 pinch Salt

Chicken in the Mixing Bowl

Thermomix® Setting

Place the bone-in chicken breast in the Thermomix bowl. Add salt and black pepper to taste. Add 500 ml of water.

Shred the chicken

Remove the chicken from the bowl and let it cool. Shred the chicken with your hands and place it in a deep dish.

Marinate the chicken

Add the juice of the lemons, red pepper, paprika, garlic powder, ginger and oregano to the shredded chicken. Mix the ingredients well and taste the chicken ceviche. Adjust the seasonings to your liking.

Chop the onion and cilantro

Place the red onion in the Thermomix bowl and chop 3 seconds/speed 5. Add the fresh cilantro and chop 2 seconds/speed 4.

Mix the ingredients

Add the chopped red onion and cilantro to the marinated chicken. Add the cream cheese and mix the ingredients well with the spatula. Add salt to taste.

Chill and serve

Refrigerate the chicken ceviche for at least 30 minutes before serving. Serve in cups or glasses and decorate with a piece of avocado and a spoonful of toasted corn.
