Description

This vegan silken tofu tiramisu is a delicious dessert that doesn't require any animal products. The cashew cream provides a creamy texture, while the spelt rusk is soaked in espresso. With a preparation time of 30 minutes and a chilling time of 6 hours, it is ideal for special occasions or as a sweet surprise. Ingredients (12 ingredients)

  • 200 g Cashews
  • 4 Tassen Espresso
  • 1 TL Cinnamon
  • 1 EL Amaretto liqueur
  • 600 g Silken tofu
  • 4 EL Agave nectar
  • 2 Päckchen Vanilla sugar
  • 1 kl. TL Locust bean gum
  • Organic lemon
  • 150 g Margarine
  • 180 g Vegan (spelt) rusk
  • 3 EL Cocoa powder

Preparation (5 steps)

Soak cashews

Soak 200 g of cashews in water overnight, but for at least 6 hours. After soaking, pour off the water.

Prepare espresso

Prepare 4 cups of espresso/1 cup of strong coffee, stir in 1 tsp of cinnamon (and 1 tbsp of Amaretto liqueur) and let it cool.

Prepare cashew cream

30 sec/Speed 8-10

Place 200 g of soaked cashews, 600 g of silken tofu, 4-5 tbsp of agave nectar, 2 packets of vanilla sugar, 1 small tsp of locust bean gum, zest of an organic lemon and 150 g of margarine in the mixing bowl and puree for 30 sec./level 8-10.

Layer rusk

Turn 180 g of vegan (spelt) rusk in the espresso mixture and place a layer of rusk in a glass dish. Cover the rusk layer with silken tofu cashew cream. Repeat the process one or two times (depending on the size of the mold). Finish with a layer of cream and sprinkle with 3 tbsp of cocoa powder.

Cool tiramisu

Refrigerate the tiramisu overnight, but for at least 6 hours, until cold and firm. Before serving, dust the tiramisu again with cocoa powder.
