Description

I love preparing this homemade red curry paste! It's so much tastier than store-bought and you can adjust the spiciness level to your liking. The base of dried red chilies, combined with shallot, garlic and spices, creates an explosion of flavors. I use it in my curries, soups and even to liven up stir-fried vegetables. The preparation is quick and easy with the Thermomix®, and the result is always perfect. A true essential in my kitchen to bring an exotic touch to my dishes. Feel free to experiment with the amounts of spices to create your own unique version!

Ingredients (10 ingredients)

  • 5 piece large dried red chilies
  • 15 piece bird's eye chilies
  • 1 piece large shallot, chopped
  • 1 clove garlic
  • 4 c. à s. water
  • 1 c. à s. lemongrass
  • 1 c. à s. curry powder
  • 1 c. à s. paprika
  • 1 c. à c. whole cumin
  • 1 c. à c. coriander seed

Preparation (3 steps)

Soften the chilies

Place the dried red chilies in a bowl with a little water. Heat in the microwave for a few minutes to soften them. If you are using large chilies, remove the seeds.

Roast and grind the spices

In a dry pan, sauté the coriander seeds and whole cumin for a few minutes over medium heat, until they release their fragrance. Let cool slightly, then grind them finely using a mortar and pestle.

Mix the ingredients

Place the softened chilies (without the soaking water), the chopped shallot, the garlic clove, the water, the lemongrass, the curry powder, the paprika, the cumin and the ground coriander in the Thermomix bowl. Mix for 30 seconds at speed 10, scraping the sides of the bowl with a spatula if necessary, until a smooth paste is obtained.
