Description

This recipe shows how to make dried meat yourself. The meat is marinated in a marinade of soy sauce, honey and spices and then seared in the pan. Then it is dried in the dehydrator. Ideal as a protein-rich snack for on the go or after sports.

Ingredients (9 ingredients)

  • 1000 g Meat (beef or game)
  • 100 ml Soy sauce
  • 2 EL Honey
  • 2 EL Olive oil
  • 1 TL Pepper
  • 1 TL Paprika powder
  • 1 TL Garlic powder
  • 1 TL Onion powder
  • 0.5 TL Chili powder

Preparation (5 steps)

Prepare meat

Cut the meat (approx. 1 kg) into approx. 0.5 cm thick slices. Make sure that the slices are not too thick, otherwise they will not dry properly.

Prepare marinade

Put the soy sauce (100 ml), honey (2 tbsp), olive oil (2 tbsp), pepper (1 tsp), paprika powder (1 tsp), garlic powder (1 tsp), onion powder (1 tsp) and chili powder (1/2 tsp) into the mixing bowl.

Mix the marinade for 20 sec/speed 3.

Marinate meat

Put the meat slices in a bowl and pour the marinade over them. Make sure that all slices are well covered. Cover the bowl and leave to marinate in the refrigerator for at least 2 hours, or preferably overnight.

Dry meat

Place the meat slices on the grids of the dehydrator. Make sure that the slices do not touch each other so that the air can circulate properly. Set the dehydrator to 60°C and let the meat dry for approx. 12-24 hours. The exact drying time depends on the thickness of the slices and the performance of the dehydrator. The meat should feel leathery, but no longer moist.
