Description

Pears in red wine balsamic is a festive dessert for the Thermomix®, ideal for autumn and winter. This sweet dish combines pears with red wine, balsamic, star anise and brown sugar. In 55 minutes, 4 servings are created. The vegetarian dish is suitable as a light dessert or for special occasions such as Christmas. Refined with roasted pistachios, it is a treat for the whole family.

Ingredients (9 ingredients)

  • 100 g brown sugar
  • 100 ml Aceto Balsamico di Modena
  • 750 ml Red wine (dry)
  • 1 Stück Star anise
  • 2 Pck. Vanilla sugar
  • 4 Stück Pears
  • 50 g California pistachios roasted & salted
  • 2 TL Cornstarch
  • 400 g Vanilla yogurt

Preparation (8 steps)

Caramelize sugar

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 100 g of brown sugar to the mixing bowl and caramelize for 5 min./120°C/speed 1 without measuring cup until golden yellow. Observe the caramelization process carefully.

Deglaze and bring to a boil

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 100 ml of balsamic vinegar to the caramelized sugar in the mixing bowl and stir for 10 sec./speed 3 to dissolve the caramel. Then add 750 ml of dry red wine, 1 star anise and 2 packs of vanilla sugar and bring to a boil for 5 min./100°C/speed 2.

Prepare pears

While the red wine stock is boiling, peel 4 pears, halve them and remove the core with a melon baller. Set the prepared pear halves aside.

Cook pears

Thermomix® Setting
20 min/194°F/Gentle stir speed 90 Reverse

Place the prepared pear halves in the mixing bowl with the red wine stock and cook for 20 min./90°C/gentle stir setting/reverse rotation without measuring cup. The reverse rotation prevents the pears from overcooking.

Chop pistachios

Remove 50 g of roasted and salted pistachios from the shell and chop coarsely with a knife. Set the chopped pistachios aside.

Thicken sauce

Remove 200 ml of the red wine stock from the mixing bowl and place in a separate bowl. Mix 2 tsp of cornstarch with 2 tbsp of water and add to the bowl with the red wine stock. Stir the mixture until no lumps remain.

Finish sauce

2 min/212°F/Speed 2 100

Return the cornstarch mixture to the mixing bowl and bring to a boil for 2 min./100°C/speed 2, stirring, until the sauce thickens. If necessary, scrape down from the edge with the spatula.

Arrange

Arrange the pear halves with the red wine sauce and 400 g of vanilla yogurt and serve sprinkled with the chopped pistachios. The sweet dish can be enjoyed warm or cold.
