Description

These creamy orange dessert glasses are a real treat for all lovers of fruity desserts! The combination of velvety orange cream, crunchy cashew nuts and a light coconut cream makes this dessert a special highlight. I especially like to make this cream for Easter, as it is a perfect color match and easy to prepare. The homemade chocolate bunny ears are the icing on the cake and make the dessert a real eye-catcher. The preparation takes a little time, but the result is worth it! Ideal for a festive Easter brunch or as a sweet ending to a successful dinner.

Ingredients (9 ingredients)

  • 800 ml Orange juice
  • 4 piece Eggs (M)
  • 4 tbsp Cornstarch
  • 0.5 tsp Bourbon Vanilla Paste
  • 100 g Chocolate (bittersweet)
  • 0.5 tsp Coconut oil
  • 50 g Cashew nuts roasted
  • 100 g Whipping cream
  • 150 g Coconut yogurt

Preparation (9 steps)

Prepare orange juice mixture

Thermomix® Setting

Add 400 ml orange juice, eggs, cornstarch and vanilla paste to the mixing bowl and mix for 20 sec./speed 4.

Cook orange cream

Thermomix® Setting
5 min/212°F/Speed 2 100

Add the remaining 400 ml of orange juice to the mixing bowl and bring to the boil for 5 min./100°C/speed 2. Then add the prepared egg mixture and stir for a further 5 min./100°C/speed 2. The mixture should become firm.

Refine and chill cream

Strain the cream through a sieve into a bowl. Cover the surface directly with cling film to prevent skin from forming. Then refrigerate for at least 1 hour.

Melt chocolate

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Break the chocolate into pieces and place in a heat-resistant bowl with coconut oil. Place the bowl in the Varoma container. Add 500 ml of water to the mixing bowl, attach the Varoma and melt for 10 min./Varoma/speed 1.

Create chocolate decoration

Fill the melted chocolate into a piping bag with a small opening. Apply 12 bunny ears to baking paper and allow to dry completely.

Chop cashew nuts

Add cashew nuts to the mixing bowl and chop roughly for 3 sec./speed 5.

Prepare coconut cream

Thermomix® Setting
2 min/keine/Speed 3.5

Insert butterfly. Add whipping cream to the mixing bowl and whip until stiff for 2 min./speed 3.5. Add coconut yogurt and fold in for 10 sec./speed 2.

Fold in coconut yogurt

Thermomix® Setting
10 sec/keine/Speed 2

Remove butterfly. Add coconut yogurt to the whipped cream and stir in for 10 sec./speed 2.

Arrange dessert

Layer the orange cream with the coconut cream in glasses. Sprinkle with the chopped cashew nuts and decorate with the chocolate bunny ears.
