Description

This Thermomix® recipe for spinach dumplings with cheese sauce is a hearty vegetarian main course, ideal for the winter season. The main ingredients are leaf spinach, stale bread rolls and mountain cheese. Preparation with the Thermomix® takes about 45 minutes and yields 4 servings.   • 400 g Leaf spinach (frozen)
  • 1 Onion
  • 250 g Stale bread rolls (5 bread rolls)
  • 2 EL Butter
  • 125 ml Milk
  • 50 g Mountain cheese (grated)
  • 3 EL Breadcrumbs
  • 2 Eggs
  • 1 TL Salt
  • 1 Prise Pepper
  • 1 Prise Nutmeg
  • 30 g Butter
  • 20 g Flour
  • 400 ml Milk
  • 150 g Mountain cheese (grated)

Preparation (6 steps)

Prepare spinach

Thaw 400g frozen leaf spinach and squeeze well with your hands. Put the spinach into the mixing bowl and chop for 3 seconds/speed 5.

Sauté onions

Put 1 onion into the mixing bowl and chop for 3 seconds/speed 5. Add 2 tbsp butter and sauté for 3 min./120°C/speed 1.

Prepare bread roll mixture

Add 125 ml milk, 1 tsp salt, pepper and nutmeg to the onions in the mixing bowl and heat for 2 min./90°C/speed 2. Cut 250g stale bread rolls (5 bread rolls) into cubes and place in a large bowl. Pour the hot milk mixture over the bread roll cubes and let cool slightly.

Complete dumpling mixture

Add 50g grated mountain cheese, 3 tbsp breadcrumbs, the chopped spinach and 2 eggs to the bread roll cubes and knead everything well. Let rest for 15 minutes.

Shape and cook dumplings

Form 12 dumplings with wet hands. Pour water into the mixing bowl, insert the simmering basket and bring the water to a boil for 10 min./Varoma/speed 1. Place dumplings in the simmering basket and cook for 12-15 min./Varoma/speed 1.

Prepare cheese sauce

2 min/122°F/Speed 1, 1 min/194°F/Speed 3, 5 min/194°F/Speed 4, 2 min/140°F/Speed 2 122°F, 194°F, 140°F

Empty the mixing bowl. Put 30g butter in the mixing bowl and melt for 2 min./50°C/speed 1. Add 20g flour and stir for 1 min./90°C/speed 3. Gradually add 400 ml milk and simmer for 5 min./90°C/speed 4. Add 150g grated mountain cheese and melt for 2 min./60°C/speed 2. Season with salt and pepper.
