Description

This recipe for duck leg is a hearty main course, ideal for festive occasions like Christmas. Preparation takes about 2.5 hours, with an active working time of 30 minutes. The duck legs are first seared in a pan and then braised in the Thermomix® with vegetables and red wine. The dish is rich and filling, perfect for the cold season.

  • 2 Zwiebeln Onions
  • 200 g Celery
  • 200 g Carrots
  • 2 EL Tomato paste
  • 1 TL Mustard
  • 1 TL Salt
  • 1 TL Pepper
  • 1 TL Thyme, dried
  • 1 TL Rosemary, dried
  • 250 ml Red wine, dry
  • 500 ml Poultry stock
  • 2 EL Oil
  • 1 TL Cornstarch (optional)

Prepare vegetables

Peel and quarter the onions. Clean and coarsely chop the celery and carrots.

Chop onions

Put the onions in the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Chop vegetables

Add tomato paste, mustard, salt, pepper, thyme and rosemary to the vegetables in the mixing bowl and sauté for 5 min./120°C/level 2.

Deglaze with red wine

Deglaze with red wine and let it reduce for 2 min./100°C/level 1 without a measuring cup.

Add stock

Add poultry stock and simmer for 5 min./100°C/level 1.

Sear duck legs

Sear the duck legs in a separate pan from all sides.

Add duck legs and braise

Add the seared duck legs to the vegetables in the mixing bowl and braise for 90 min./95°C/reverse rotation level 1. Leave the measuring cup on.

Pass the sauce

Remove the duck legs from the mixing bowl and keep warm. Pass the sauce through a sieve and return to the mixing bowl.

Reduce sauce

Reduce the sauce for 10 min./Varoma/level 2 without a measuring cup.

Refine sauce

Season with salt and pepper to taste. If you like, you can thicken the sauce with some cornstarch. To do this, mix 1 teaspoon of cornstarch with a little cold water and add to the mixing bowl. Cook for 2 min./100°C/level 2.
