Description

This brioche plaited loaf a la Gerhard Berger is prepared with the Thermomix® and is a delicious pastry made from flour, dry yeast, sugar, milk and butter. The recipe from the category bread and rolls includes yeast dough and is ideal for baking. The preparation takes about 120 minutes, of which 30 minutes are active working time, and yields 6 servings.   • 500 g Flour 700
  • 1 Päckchen Dry yeast
  • 60 g Sugar
  • 1 Prise Salt
  • 0.5 TL Grated lemon zest
  • 250 ml Lukewarm milk
  • 60 g Soft butter
  • 1 Stück Egg yolk for brushing
  • 1 Stück Egg for brushing
  • Pearl sugar

Mix dry ingredients

Put flour, dry yeast, sugar in the mixing bowl and mix for 10 sec./speed 3.

Add liquid ingredients and knead dough

Add lukewarm milk, soft butter and grated lemon zest and knead for 2 min./kneading stage. Then add 1 pinch of salt and knead briefly.

Let the dough rise

Let the dough rise covered. Duration: Drink coffee or smoke 1! 🙈 🙉 🙊

Shape plait

After rising, knead the dough on a floured work surface and divide into 4 pieces. Shape these parts. Form into strands and braid a 4-strand plait. Weigh down the beginning of the plait with something to hold it. Let the plait rise for about 30 minutes. Brush with beaten egg and egg yolk, let it dry briefly, sprinkle with pearl sugar.

Baking

Bake the plait in a preheated oven at 180°C convection for approx. 20-25 minutes until golden brown.
