Description

These Thermomix® pistachio marzipan cookies are festive pastries made with wheat flour, almonds, butter, sugar, and pistachios. Preparation takes a total of 180 minutes, with an active working time of about 60 minutes. The recipe yields a large quantity of cookies and is ideal as finger food or a dessert for special occasions. Perfect for anyone who wants to bake Christmas cookies with the Thermomix®.

Ingredients (15 ingredients)

  • 250 g Wheat flour type 405
  • 100 g Ground almonds
  • 150 g Butter cold
  • 100 g Sugar
  • 5 Tropfen Butter-vanilla flavoring
  • 1 Prise Salt
  • 1 Stück Egg size M
  • 1.5 EL Baking cocoa
  • 200 g Marzipan raw material
  • 50 g Ground pistachios
  • 30 g Chopped pistachios
  • 75 g Powdered sugar
  • 200 g Nougat mass (room temperature!)
  • 150 g Red currant jam
  • 50 g Dark chocolate couverture

Preparation (15 steps)

Prepare shortcrust pastry

Add wheat flour, ground almonds, cold butter in pieces, sugar, butter-vanilla flavor, salt, egg and baking cocoa to the mixing bowl.

Knead shortcrust pastry

Knead all ingredients for 2 min./kneading stage to a homogeneous dough.

Chill dough

Wrap the dough in plastic wrap and refrigerate for at least 45 minutes.

Preheat oven

Preheat the oven to 180°C top/bottom heat.

Roll out dough and cut out cookies

Roll out the chilled dough on a lightly floured surface to about 3mm thick and cut out cookies. Place the cookies on a baking sheet lined with baking paper.

Bake cookies

Bake the cookies in the preheated oven for 10-12 minutes. Then let cool well.

Prepare marzipan mixture

Place powdered sugar, ground pistachios and marzipan raw material in the mixing bowl.

Knead marzipan mixture

Knead the ingredients for 30 sec./speed 4 to a smooth mass.

Cut out marzipan toppers

Roll out the marzipan mixture with a little powdered sugar and cut out about 3mm thick toppers with the same cutter as the cookies.

Stir nougat until smooth

Place room temperature nougat in the mixing bowl.

Assemble cookies

Pipe nougat cream along the edge of each cookie base. Lightly heat and smooth the jam and put a dab in the center of the cookie. Place marzipan layer on top. Spread another cookie with jam and a dab of nougat cream and place it on the marzipan layer. Briefly put the cookies in the refrigerator.

Place dark couverture in pieces in the mixing bowl.

Decorate cookies

Decoratively spread the melted couverture with a fork on the cookies and decorate with chopped pistachios.
