Description

This rustic bread and egg soup is a comforting dish perfect for cold days. The recipe is simple and uses basic ingredients that we usually have at home, such as stale bread, garlic, onion and an egg. It is an excellent way to take advantage of bread that is no longer fresh and transform it into a delicious and nutritious meal. The soup has an intense garlic and onion flavor, with the smooth texture of the soaked bread and the egg cooked to perfection. Ideal for a quick dinner or a comforting lunch. Ingredients (8 ingredients)

  • 1 piece Stale bread
  • 1 clove Garlic
  • 1 piece Onion
  • 1 piece Egg
  • 0.02 l Oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 bunch Parsley (if desired)

Prepare the ingredients

Cut the bread into small squares. Finely chop the onion. If the garlic cloves are large, cut them in half.

Brown the bread

Thermomix® Setting
5 min/248°F/Giro a la izquierda/Velocidad cuchara 120 Reverse

Add a splash of oil to the Thermomix bowl. Heat the oil by programming 3 Min./120°C/Stufe 1. Add the pieces of bread and program 5 Min./120°C/Giro a la izquierda/Velocidad cuchara so that they brown well. Remove the golden bread from the bowl and reserve.

Sauté the onion and garlic

Thermomix® Setting
5 min/248°F/Speed 1 120

Add a splash of oil to the Thermomix bowl. Add the chopped onion and garlic cloves. Program 5 Min./120°C/Stufe 1 to sauté until golden brown.

Add paprika

Thermomix® Setting
10 Seg./Speed 1

Add a pinch of paprika to the bowl and program 10 Seg./Stufe 1 to mix well with the onion and garlic.

Incorporate the bread

Thermomix® Setting
1 min/Giro a la izquierda/Velocidad cuchara Reverse

Add the golden bread to the Thermomix bowl and program 1 Min./Giro a la izquierda/Velocidad cuchara to stir.

Cook the soup

Thermomix® Setting
10 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add salt and pepper to taste. Cover with water until it exceeds the mixture by one finger. Program 10 Min./100°C/Giro a la izquierda/Velocidad cuchara.

Add the egg

Thermomix® Setting
3 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Lower the temperature to 90°C. Add a whole egg to the Thermomix bowl. Program 3 Min./90°C/Giro a la izquierda/Velocidad cuchara. Watch that the white is white and the yolk is at its point.

Let the soup rest for about 10 minutes before serving.
