Description

This watercress broth is a light and healthy dish, ideal for the sick or for strengthening. Prepared with semi-meat, yellow carrots, and fresh watercress, it is rich in nutrients. Preparation takes about 30 minutes and results in a soothing soup. Refined with an egg yolk, it is easily digestible and nutritious.

Ingredients (5 ingredients)

  • Chicken or veal
  • Salt
  • Yellow carrots
  • 1 Hand voll Watercress
  • 1 Stück Egg yolk

Cook the meat

Place 1/2 chicken or 1/2 kg veal, a little salt, and yellow carrots in the mixing bowl and cover with water. Cook for 20 min./100°C/speed 1.

Prepare the broth

Remove the meat from the mixing bowl. Add a large handful of watercress, washed and crushed, to the broth in the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Strain the broth

Pass the broth through a fine sieve.

Refine the broth

Thicken the broth with an egg yolk or serve as is.
