Description

This hearty sauce is ideal for game dishes. It is prepared with root vegetables, red wine and spices and refined in the Thermomix®. The sauce is easy to prepare and is perfect for festive occasions. The preparation time is approx. 100 minutes and yields about 6 servings.

Ingredients (17 ingredients)

  • 2 Stück Onion(s)
  • 1 Stück Carrot(s)
  • 150 g Celeriac
  • 1.5 TL Icing sugar
  • 1 EL Tomato paste
  • 300 ml Red wine
  • 750 ml Poultry stock or vegetable broth
  • 1 TL Juniper berry(ies)
  • 0.5 TL Peppercorns, black
  • 0.5 TL Coriander seeds Seeds
  • 1 TL Allspice berries Berries
  • 0.2 Stück Cinnamon stick(s)Splinter from a stick
  • 1 Stück Bay leaf
  • 2 TL Cornstarch
  • 1 EL Cranberries
  • 0.5 TL Bittersweet chocolate chopped
  • 1 EL Aceto balsamico

Preparation (9 steps)

Prepare vegetables

Peel an onion, carrot and celery and cut into 1-2 cm cubes. The second onion will be used later.

Chop onion

Place the remaining onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Sauté vegetables

Add the prepared diced vegetables, icing sugar and tomato paste to the mixing bowl and sauté for 3 min./120°C/speed 1.

Deglaze and simmer

Thermomix® Setting
60 min/203°F/Speed 1 95

Deglaze with red wine and simmer for 5 min./100°C/speed 1 without the measuring cup. Add poultry stock or vegetable broth and simmer for 60 min./95°C/speed 1.

Prepare spices

Roast juniper berries, peppercorns, coriander seeds, allspice berries and cinnamon stick in a pan without fat until fragrant.

Add spices and continue simmering

20 min/203°F/Speed 1 95

Add the roasted spices and bay leaf to the mixing bowl and simmer for another 20 min./95°C/speed 1.

Strain sauce

Strain the sauce through a sieve to remove the solids. Return the liquid to the mixing bowl.

Thicken sauce

2 min/212°F/Speed 2 100

Mix the cornstarch with a little water and add to the mixing bowl. Cook for 2 min./100°C/speed 2 until the sauce is creamy.

Season

10 sec/Linkslauf Speed 1 Reverse

Add cranberries and chopped bittersweet chocolate and stir in for 10 sec./reverse rotation speed 1. Season with salt, pepper and Aceto Balsamico.
