Description

This pasta with cauliflower, bacon, and cheese sauce is a comforting and satisfying dish that's perfect for a weeknight meal. I've been making this recipe for years, and it's always a hit with my family. The combination of crispy bacon, tender cauliflower, and creamy cheese sauce is simply irresistible. It's a great way to sneak in some extra vegetables, and the wholemeal roll topping adds a lovely crunch. Feel free to use different types of cheese or add some herbs for extra flavor. This dish is best served warm with a side salad.

Ingredients (10 ingredients)

  • 200 g streaky bacon
  • 300 g dried pasta
  • 1 piece cauliflower
  • 25 g butter
  • 25 g plain flour
  • 300 ml milk
  • 1 tsp Dijon mustard
  • 140 g cheddar
  • 1 piece soft wholemeal roll
  • salad

Preparation (9 steps)

Crisping the Bacon

Preheat the grill to high. Grill the bacon slices for 5 minutes or until crispy. Drain on kitchen paper and cut into small pieces. Set aside.

Cooking the Pasta and Cauliflower

Bring a large pan of salted water to a boil. Add the pasta and cook according to package instructions. Add the cauliflower to the pasta pan for the final 8 minutes, so that it is just tender. Drain, reserving 2 tbsp of the cooking water. Set aside.

Melting Butter

Add the butter to the mixing bowl and melt for 2 Min./50°C/Stufe 1.

Making the Cheese Sauce

Add the flour to the mixing bowl and cook for 2 Min./100°C/Stufe 2.

Adding Milk and Cooking the Sauce

Thermomix® Setting
5 min/194°F/Speed 3 90

Gradually add the milk to the mixing bowl, mixing well between each addition. Cook for 5 Min./90°C/Stufe 3.

Seasoning and Adding Mustard

Thermomix® Setting
1 min/140°F/Speed 2 60

Season with salt and pepper to taste. Add the mustard and half of the grated cheese (70g) to the mixing bowl. Mix for 1 Min./60°C/Stufe 2 until the cheese has melted and the sauce is smooth.

Combining Pasta, Cauliflower, and Sauce

Tip the pasta and cauliflower back into the pan along with the reserved cooking water. Stir through the cheese sauce and bacon. Transfer the mix to a baking dish.

Preparing the Topping

Mix together the breadcrumbs and remaining cheese (70g). Sprinkle over the pasta.

Grilling the Pasta

Cook for 5 minutes under the grill until browned. Serve with a salad, if you like.
