Description

These nut crescents are a delicious pastry that is especially popular in winter. The dough is prepared with lukewarm milk, butter, sugar and dry yeast and filled with a nut filling made from butter, powdered sugar, egg yolk, whipped cream and various nuts. After baking, the crescents are brushed with melted butter to give them a nice shine. Ideal for Christmas or other festive occasions.

Ingredients (13 ingredients)

  • 260 ml Milk (lukewarm)
  • 80 g Butter
  • 80 g Crystal sugar
  • 11 g Dry yeast
  • 0.5 TL Salt
  • 1 Stück Egg
  • 500 g Flour Type 480
  • 40 g Butter
  • 100 g Powdered sugar
  • 1 Stück Yolk
  • 40 ml Whipped cream
  • Vanilla sugar
  • 200 g Nuts (Hazelnuts, Walnuts, Almonds etc.)

Preparation (8 steps)

Prepare dough

Thermomix® Setting

Put 260 ml lukewarm milk, 80 g butter, 80 g crystal sugar, 11 g dry yeast, 1/2 tsp salt and 1 egg in the mixing bowl and mix for 2 min./37°C/speed 2.

Add flour and knead

Add 500 g flour type 480 and knead for 2 min./kneading stage.

Let the dough rest

Let the dough rest for 1 hour and then another 30 minutes.

Prepare nut filling

Put 40 g butter, 100 g powdered sugar, 1 yolk, 40 ml whipped cream and vanilla sugar in the mixing bowl and mix for 20 sec./speed 3.

Add nuts

Thermomix® Setting
10 sec/Speed 3

Add 200 g nuts (Hazelnuts, Walnuts, Almonds etc.) and mix for 10 sec./speed 3.

Shape crescents

Divide the dough into portions and roll out into circles. Cut the circles into 12 pieces. Spread each piece with the nut filling and roll into crescents.

Bake crescents

Place the crescents on a baking sheet and brush with water. Then brush with a beaten yolk with 1 tbsp water. Bake in a preheated oven at 180°C top/bottom heat for about 15 minutes. Place 2 cups of water in the oven.

Apply glaze

For the shine, lightly grease the crescents with melted butter.
